Are your kids obsessed with Shopkins?? One of my daughter’s friends literally has hundreds of the little guys, so we thought it would be fun to surprise her with a Rainbow Shopkins Cake for her birthday!

For some kids, Shopkins is a way of life. Apps, shopping lists, and new collections on the regular – it’s like the Beanie Babies of this generation of kids. Apparently there’s even a TV show?!

When we were planning what special treat to make for our friend, I knew that it had to be bright and colorful – like the little Shopkins themselves! We had previously used this unique method to make a zebra cake, so I knew it would work perfectly for making a rainbow cake!

This cake was a fun way to gift our friend some of her favorite toys and you could even use it for other small toys – action figures, small trains or cars, etc. And her mom was so happy that someone else offered to make the cake and take something off of her plate!

Everyone at the party was stunned when we cut into the rainbow cake – they could NOT figure out how we got such perfect rings of color. More than a few insisted we must have some special rainbow-cake-making-only pan.

But nope! This rainbow cake couldn’t be easier to make – you simply pour each new color directly into the center of the cake pan, on top of the last color that you added. The pressure slowly pushes each color out.

And the best part of this cake? Kids can make it really easily with amazing results – which helps develop their confidence in the kitchen. My daughter was so proud to present this gorgeous Shopkins cake to her friend and hear all of the adults ooh and aah over the rainbow pattern.

Rainbow Shopkins Cake Ingredients

  • White cake mix of choice
  • PLUS ingredients called for on the box
  • Pink, yellow and blue gel food dye
  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 2-3 Tablespoons milk or cream
  • 3-4 cups powdered icing sugar
  • Rainbow sprinkles, optional

How to Make an Easy Shopkins Birthday Cake

Preheat oven to 350F.

Make the cake according to package directions.

Portion out 1/2 cup of the cake batter into 6 small bowls. (And then divide up any remaining batter equally into the bowls.)

Dye one bowl of batter pink, one orange (using yellow and pink), one yellow, one green (using blue and yellow), one blue and one purple (using blue and pink).

Grease and line your 2 cake pans and pour half of the pink batter into the center of each.

Next, pour the orange batter directly into the middle of the pink batter. By the time you are done the second pan, you will be ready to pour in half of the yellow to the first pan. Repeat until all colors are added to the pan.

Bake according to package directions, until an inserted toothpick comes out clean.

Let cool before removing from the cake pans.

You can skip evening out the cake layers since there is only two – or use our foolproof dental floss method for perfect layering.

For the frosting, combine the butter, sugar and vanilla extract. Add 2 Tablespoons of the cream and adjust with more cream or more icing sugar to get the perfect consistency.

Portion out a half cup of frosting each into 3 bowls. Dye one bowl pink, one blue and one yellow. Set aside.

Using your offset spatula, add a few tablespoons of frosting on top of one cake and layer the second on top, and then frost the cake completely. You may need to do two coats of frosting to prevent crumbs from being on the outside.

Spoon your pink, blue and yellow frosting into piping bags fit with the 3-color couplers. Snap them together and then twist on the icing tip.

Swirl the tri-color frosting onto the edge of the cake. If your child is doing this you may want to help by rotating the cake for them.

Add rainbow sprinkles and an assortment of Shopkins to the top of your cake.

Serve and enjoy!
