How to make fresh blueberry loaf:

In a standing mixer, cream the butter and sugar until fluffy. Add in the eggs, vanilla and milk and continue mixing.

Gradually add in the dry ingredients and mix until well combined.

Stir in blueberries by hand, to prevent crushing.

Pour batter into the loaf pan. Bake for 1 hour (give or take 5 minutes depending on your oven), until a toothpick inserted into the loaf comes out clean.

You may have a defective oven thermostat. We recently had to replace our lovely old stove when the thermostat died and vintage replacements cost more than a new convection oven stove with induction hobs! I used a hand held laser thermometer to check the oven temperature after a few items burned. I found that with the oven set at 375F it heated up to over 600F! That explained a lot!

BTW, you have to love induction hobs for cooking. Fast warm up, instant temperature control, both up and down (depending on whether using iron pans or stainless steel with iron inserts) and very easy clean up. I’d used low power ones before in our RV but these high power home rings are magnificent. I can boil a big pot for pasta in seconds now, not minutes. Woo hoo!
