This Carrot Cake Baked Oatmeal is a guaranteed crowd-pleaser – combining the deliciousness of carrot cake with the healthy benefits of oatmeal. This easy recipe is perfect for a make-ahead breakfast or snack that everyone will love!
Finding the perfect oat square can be a challenge. Often, when you do come across one, it’s dry and bland, leaving you disappointed. For me, an ideal oat square has to be sweet with a touch of spice, crisp on the outside, and chewy on the inside, all while satisfying your hunger.
These carrot cake oat bars check all those boxes. Plus, they incorporate vegetables in a way that enhances the flavor without overpowering it. The shredded carrots blend seamlessly into the bars, adding nutrition and subtle sweetness. The main flavors come from the honey and coconut’s sweetness, the warmth of cinnamon and nutmeg, and the earthiness of the oats.
These bars are also adaptable to personal preferences. My daughter enjoys them with raisins and yogurt chips (which melt into tangy-sweet pockets), while I like them plain or with pecans. Feel free to customize them with your favorite mix-ins. –Jennifer

- 3/4 cups butter
- 1 Tablespoon honey
- 1 1/4 cup rolled oats
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 cup sugar
- 1/2 cup shredded coconut
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup raisins, optional
- 2 medium carrots, peeled and shredded
- 1/2 cup yogurt chips or white chocolate chips, optional
Tip: add nuts, raisins or chocolate chips, as desired.

Instructions
To Prep: Preheat oven to 350°F and grease an 8-inch square casserole dish.

In a large microwave-safe bowl, combine the butter and honey. Melt for 25 seconds in the microwave and stir well.
In a small bowl, whisk together the oats, flour, baking powder, sugar, shredded coconut and spices. Add in the raisins, carrots and optional white chocolate chips. Stir until evenly distributed.

Stir the dry ingredients into the melted butter mixture until well-combined.
Fold the mixture out into the prepared casserole dish and bake for 15-20 minutes until light brown and set at the edges.

Prep Tips
- Glaze – These oatmeal bars taste amazing all on their own, but you can also top with melted white chocolate chips for a delicious layer of flavor!
- Storage – Keep in an airtight container at room temperature for 4-5 days. You can also freeze by cutting and wrapping each individual square, then placing in a ziptop freezer bag or your favorite freezer containers. Freeze for up to two months and allow to come to room temperature before serving.
