Ice Cream Sundae Rice Krispie Treats

Ice Cream Sundae Marshmallow Squares
Growing up, Rice Krispie Treats were one of my favorite sweet snacks. This recipe takes the ordinary rice krispie treat to a whole new level!
Imagine if you combined a hot fudge sundae…and a rice krispie treat…and that’s what you have here!
We started with a classic cereal bar recipe and topped it with lots of sundae fixins: fudge, sprinkles, even a cherry on top!
What I especially love about these treats is that unlike ice cream, they don’t melt! But you could set this up as a “sundae” bar and let kids add their own favorite toppings. This would be a fun birthday party idea, slumber party activity, etc.

Ingredients
- 16 large marshmallows (about 2 cups)
- 2 cups rice krispie cereal
- 1 Tablespoon butter
- 1/2 cup chocolate chips or squares
- 1 teaspoon coconut oil or shortening
- 1/4 cup maraschino cherries
- 1/8 cup mini marshmallows
- 1/8 cup mini chocolate chips
- Sprinkles, as desired

Instructions
Melt the marshmallows and butter in the microwave in 20-second intervals, stirring thoroughly in between each heating. Add in the Rice Krispies and stir to coat.
Line a casserole dish and pour the Rice Krispie-marshmallow mixture into the dish. You may want to wet your hands or a spatula to help press down the mixture.
Refrigerate while you prepare the remaining ingredients.
Melt the chocolate in a small container with the coconut oil.
Drain the cherries and cut in half.
Remove the Rice Krispie squares from the fridge and drizzle on a layer of chocolate.
Sprinkle the cherries, chocolate chips, and marshmallows over the chocolate drizzle.
Add another layer of drizzle, and then top with sprinkles.
Return the dish to the fridge and let set, 1 hour.
Cut into squares and enjoy!
Prep Tips
- When melting the butter/marshmallow mixture and the chocolate, be sure to use microwave safe bowls and handle with care. The bowl itself may become hot. When working with younger kids, we recommend that adults handle this step.
- Normally, rice krispie treats do not require refrigeration. However, if you use maraschino cherries as a topping, you will need to keep the finished treats in the fridge. I recommend keeping the treats in an airtight container to keep them fresher longer.
- Feel free to use your own favorite toppings, ours are simple suggestions! You could use different types of chocolate drizzle: white chocolate, peanut butter chips, dark chocolate, etc. You could swap up the sprinkles for different occasions. Have fun with it!
