Healthy Chicken Salad Recipe
What comes first, the chicken or the egg?
Well, in this case we shared our Avocado Egg Salad first – but we had to quickly follow it up with another delicious, healthy sandwich filling: our Avocado Chicken Salad recipe!
Using avocado as a swap for mayonnaise keeps the creaminess, structure and adds a boost of flavor to this easy chicken salad. I’ve tried a lot of “healthy swaps” over the years and avocado is the only one that I find to be satisfying enough (though I still add a couple tablespoons of mayo – just for flavor).
This is one of my go-to recipes for leftover chicken or rotisserie chicken, and it would also be great for leftover turkey after the holidays, too.
We kept the seasonings and add-ins pretty minimal and kid-friendly, but if your kids like red onions, lettuce, shredded veggies or dried fruit, they would all make great additions to this chicken salad.

How to Make Avocado Chicken Salad
To Prep: Gather your ingredients, cook the chicken if you’re not using leftover chicken.
- Scoop the avocado into a mixing bowl and mash with the mayonnaise and Dijon mustard until mostly smooth.
- Add the cooked chicken and stir until evenly coated.
- Mix in the diced green onion, then season with salt and pepper.
- Adjust seasoning and refrigerate until ready to serve.
Prep Tips
- Use ripe but firm avocados. Overripe avocados can make the salad watery instead of creamy.
- Shred or dice chicken evenly. Uniform pieces help the salad hold together and coat more evenly.
- Start light on Dijon. Mustard adds brightness but can overpower the avocado if overused.
- Season at the end. Salt draws moisture from avocado, so final seasoning gives better control.

Avocado Chicken Recipe (Printable Recipe Card)

Avocado Chicken Salad
Ingredients
- 2 cups Cooked Chicken
- 2 Avocados
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Dijon Mustard, or less to taste
- 1 Green Onion, green part only
- Salt and Pepper, to taste
Instructions
- Cut the avocados in half and remove the pits. Scoop out the flesh of the avocado using a spoon or avocado tool and place in a mixing bowl.
- Add the mayonnaise and dijon mustard and stir well to combine.
- Add the chicken and stir to coat completely.
- Finely dice the green part of a stalk of green onion and add to the mixing bowl, then season with salt and pepper.
- Stir well and adjust seasoning to taste.
- Refrigerate until ready to serve.
