Avocado Deviled Eggs

Guacamole Deviled Eggs
Deviled eggs are one of my all time favorite party appetizers! But of course since I’m in Texas, we have to put a Tex-Mex spin on things!
These avocado deviled eggs replace the traditional mustard-y filling with a creamy and zippy avocado-lime filling. It’s similar to guacamole and oh-so-delicious!
Then we topped our eggs with crispy bacon, because everything is better with bacon right??
If you’re serving grown-ups, you can also add diced jalapeños for a little heat!

Instructions
- Slice hard boiled eggs in half, lengthwise. Place the egg white halves on a serving tray.
- Remove yolks and add them to a medium mixing bowl with avocado (skin and pit removed).
- Mix to combine, then add in the lime juice and diced onion. Mix well.
- Scoop a spoonful of the avocado mixture into each of the halved eggs.
- Top with bacon and jalapeños (but you can also omit the peppers if your kids don’t like spicy food!)
Prep Tips
- Scoop the avocado mixture into a piping bag and use this to fill your egg white halves. This makes it easy and looks pretty too!
- We mixed our guacamole filling by hand, but you can also use a food processor to make it extra smooth and creamy.
Frequently Asked Questions
Can You Make Avocado Deviled Eggs Ahead of Time?
Regular deviled eggs can be made up to 2 days ahead of time and stored in the fridge. However, avocados tend to oxidize quickly, so if you make this avocado filling too far ahead of time, it may start to brown.
I recommend making the filling the same day you intend to serve these. The lime juice will keep them looking fresh the day of your party.
If you need to make them the night before, scoop your filling into a zip-top bag to store separately from the eggs. Squeeze all the air out of the bag and keep refrigerated until you’re ready to fill your eggs.
