Cake Mix Red Velvet Crinkle Cookies
Cake mix cookies are probably my favorite kind of cookie to bake because they are SO easy! All you need is a box of cake mix, eggs, oil, and powdered sugar! You really can’t mess these up, which is why they are perfect for beginning bakers or baking with kids.
Another cool thing about cake mix cookies is that you can switch up the flavors by simply using different flavors of cake mix. Red velvet cake mix is a rich ruby hue and a deep chocolate-y flavor. They’re perfect for Valentine’s Day or Christmas (or any time!)
The best part? You can make a batch start-to-finish in under 30 minutes!

- 1 Box Red Velvet Cake Mix
- 2 Eggs
- 1/3 cup Vegetable Oil
- 1/2 cup Powdered Sugar

Instructions
To Prep: Preheat oven to 350°F and line two baking sheets with parchment paper or silicone baking mats.
- In a large bowl, beat together the cake mix, eggs and vegetable oil until smooth and completely combined, about 2 minutes.
- Use a 1 1/2 Tablespoon cookie scoop to portion out the cookie batter, then roll into balls.
- Place each ball of dough individually in the powdered icing sugar and toss to coat completely and then place on prepared pans, at least 3″ apart.
- Bake for 10 minutes until the edges of the cookies just start to turn lightly golden and the cookies spread out.
- Allow the cookies to cool for 5 minutes on the baking sheet before attempting to remove to a cooling rack or serve.
Prep Tips
- Yield – This recipe will make about 16-20 cookies, depending on the size of your scoops.
- Storage – Keep cooled cookies in an airtight container at room temperature for 3-5 days. Placing a paper towel in the bottom of the container will help absorb any excess moisture and keep the cookies fresher longer. You can also freeze the cookies in a large freezer bag for up to 2 months.
- Dough – If the dough becomes too sticky to handle, chill the dough for 15-20 minutes to make it easier to work with. Coating hands with oil or dipping them in a bowl of water can also help prevent the dough from sticking to hands.
