Twilight Sparkle Hidden Star Surprise Rainbow Bread

The unicorn obsession is strong in our household, so naturally our desserts are starting to reflect that! This Unicorn Hidden Surprise Rainbow Bread is a cute and easy dessert loaf with a really cool technique that you can replicate for lots of different themes.

A deliciously sweet dessert bread with a hidden surprise inside: a rainbow star inspired by the My Little Ponies character Twilight Sparkle.

The cool thing about this dessert loaf is that it looks normal at first sight — that is, until you cut a slice to reveal the rainbow surprise inside! You can cut the inside shape into any customized design!

We went with a star shape inspired by my daughter’s favourite My Little Ponies character, Twilight Sparkle, and unicorn-inspired colors — but you can customize the cut-out to any color scheme and use any cookie cutter shape you have on hand.

You can also use this technique to make a surprise bundt cake, mini loaves – or even a cake if you make sure you cut it in the right spots! There’s even an entire book of Surprise Inside Cakes you can follow for inspiration!

Surprise Rainbow Bread Ingredients

  • 2 boxes of vanilla cake mix (PLUS ingredients called for on the box)
  • Purple, pink, blue and teal gel coloring
  • 3 egg whites, room temperature
  • 1/4 teaspoon cream of tarter
  • 3-4 cups powdered icing sugar
  • 1 teaspoon vanilla
  • Confetti Sprinkles

Tip: Previously, I have always frozen the “surprise shapes” before adding the surrounding batter and baking, however this can be a bit tricky if moisture gets inside the surprise shapes, so this recipe does not use that method.

How to Make a Star Surprise Rainbow Cake

Preheat oven to 350F°. Line a cookie sheet and a loaf pan with parchment paper and set aside.

Make the first cake mix according to package directions.

Split the batter into 4 small bowls and add pink, purple, blue and teal gel to one bowl each. Mix well to incorporate the colors.

Scoop each the different colors of batter into separate piping bags.

Snip off the tips and pipe lines of the batter onto the prepared cookie sheet in a striped pattern until the entire pan is covered.

Bake the rainbow “sheet cake” for 18-20 minutes until baked through (or until an inserted toothpick comes out clean).

Remove the rainbow cake from oven and allow to cool as you prepare the second cake mix. Make the batter for the second batch of vanilla cake and set aside.

Using a star cookie cutter, cut out as many star shapes from your rainbow cake as possible.

Pour some of the plain cake batter into the bottom of a greased loaf pan. Next, take your star cut-outs and press them together to form a star “log” and secure them in the pan.

Pour the remaining plain vanilla cake batter around and fully covering the log of rainbow stars.

Bake for 30-40 minutes until an inserted toothpick comes out clean.

Let cool before adding the (optional) royal icing and sprinkles.

To make the vanilla royal icing

Combine 3 cups of the powdered sugar, 3 egg white, vanilla and cream of tartar using a mixer. Beat until stiff peaks form (about 2-4 minutes). Add a bit of extra powdered sugar if needed until stiff peaks form.

Dye the royal icing to your desired colors and drizzle over the cooled loaf pan. Sprinkle on the sprinkles while the icing is still wet.

Let the icing set before serving.

  11. Pour the remaining plain batter around and overtop of the stars.
  12. Bake for 30-40 minutes until an inserted toothpick comes out clean.
  13. Let cool before adding the (optional) royal icing and sprinkles.
