I am absolutely in love with my instant pot. I rarely defrost meat anymore because it can fully cook anything from frozen in less than half an hour and it allows me to prepare time-intense meals in a fraction of the time – with less baby-sitting on my part, too!

Rice Pudding usually takes over 2 hours to cook and requires you to watch the pot and check on it often.

This super easy rice pudding recipe just requires you to place all of the ingredients in the Instant Pot and press a couple of buttons. For more depth of flavor, I also like to toast the rice beforehand but that step is completely optional.

If your kids love rice pudding, this is a great recipe to make together and as long as the measurements are done correctly, it’s going to turn out delicious!

Ingredients for Instant Pot Rice Pudding

  • 2 Tablespoons butter or oil of choice
  • 1 cup arborio rice
  • 2 cups milk
  • 1 cup water
  • 1 egg
  • 2 Tablespoons cinnamon
  • 1 teaspoon salt, or more to taste
  • Optional garnishes: maple syrup, crushed nuts, sugar, etc.

Tip: Even if you skip the “rice toasting” step, still stir in the butter for a richer pudding.

How to Make Easy Rice Pudding

Rinse the rice well under running water and set aside.

Place the butter in your instant pot and set to saute.

Once the butter is melted, add the rice and toast it for 1 minute.

Add in 1 cup of the milk, 1 cup water, cinnamon and salt. Seal and cool for 10 minutes on manual.

Quick release.

Mix the egg and remaining cup milk in a small bowl and then mix into the cooked rice.

Cook on manual for an additional 3 minutes, quick release, then serve and garnish.
