Bacon-wrapped Mac and Cheese Bites

I may have something to confess, I have a little addiction for mac and cheese. Especially the extra-cheesy and melty homemade version. It’s the ultimate comfort food!
This recipe combines a comfort food classic with the ease of a bite-sized appetizer. Truly the best of both worlds!
I especially love these Mac and Cheese Bites because it’s an easy recipe with simple ingredients. You should be able to find everything at your usual grocery store.
To make things even more fun, we’ve included two variations: extra-cheesy and bacon-wrapped. Make one or both and watch as your family or party guests gobble them up!

Ingredients for Mac and Cheese Bites
- 1 cup macaroni
- 1 cup cheddar cheese
- 2 Tablespoons milk
- 1 Tablespoon cream cheese
- 2 Tablespoons parmesan cheese
- 12 bacon slices, optional
- Salt, to taste
- Paprika, to taste

How to make Mac and Cheese Bites
Preheat oven to 400°F. Meanwhile, in a medium sauce pot boil salted water and cook the macaroni according to package instructions.
Remove pot from heat, drain, and place the cooked macaroni in a medium mixing bowl. Stir in the cheddar cheese, milk, butter, cream cheese, and parmesan cheese.
Spray non-stick cooking spray over a muffin tin. (If using bacon, wrap it around the inside of the muffin indentations now.) Fill with the macaroni cheesy mix, and place it in the oven for about 15 – 20 minutes.
TIP: If serving with bacon, you might enjoy topping with chopped green onions and a sprinkle or paprika.
