Kitchen Supplies You Might Find Helpful:
Directions:
Preheat oven to 350°F.
Meanwhile, in a large bowl add spinach, feta cheese, mozzarella, red pepper, salt and pepper. Toss together until well mixed.
Unroll crescent dough and divide into triangles on a flat work surface.
Take small spoonfuls of your spinach and cheese mixture and place in the bottom part of your crescent roll dough.
Cover a baking sheet with parchment paper or a non-stick silicon baking mat.
Roll up your crescent dough, starting at the end where you placed the spinach.
Place each finished spinach croissant on the prepared baking sheet. Brush each roll with beaten egg. (This well create a crisp, buttery brown coating on top of each croissant).
Top each spinach roll with a sprinkle of grated parmesan cheese and bake for 12-15 minutes (until golden brown).
TIP: If re-heating later, use the toaster oven or conventional oven to crisp them right up again!
