Jungle Green Smoothie Bowl Ingredients

  • 1 cup frozen mango
  • 1 scoop vanilla protein powder
  • 5 ice cubes
  • 2 large handfuls of spinach
  • 2 tbs ground flaxseed
  • 1/4 cup coconut milk
  • 3/4 cup almond milk
  • 2-3 dates
  • 1/2 avocado

(makes about 2 1/4 cups)

This Jungle Green Smoothie Bowl is a delicious brain-building treat! Kid-approved, packed with the goodness of greens, high in good fats, protein, & more!

Directions

Place all ingredients in a blender and blend until smooth! Depending on the power of your blender you may need to use a tamper or add slightly more water.

Top the smoothie with your favorite nuts and seeds to make an energy boosting, customizable snack any day of the week. Just remember to have an activity planned afterwards to burn off all that energy!

Tips

  • The taste of the smoothie will vary slightly depending on your brand of protein. You can make this jungle smoothie bowl without the protein powder too.
  • Use more dates for a sweeter smoothie, fewer dates to reduce sweetness.

Pepperoni & Cheese Pizza Muffins

Pizza anything is always a hit in my house – from Pizza Dip to Pizza Sliders – we’ve experimented with pizza in countless forms, so it was about time we added a Pepperoni & Cheese Pizza Muffin recipe to our repertoire!

These pizza muffins are the perfect lunch box treat – an easy, on-the-go way to enjoy pizza without the mess. My daughter always begs for those overpriced pizza breads in the bakery section of our grocery store so she was thrilled with these.

They would also be great to serve alongside soup or pasta as an alternative to biscuits, or as a slightly indulgent side for a salad supper.

Swap out the toppings, sauce or cheese for a fun twist. Sun dried tomatoes, sharp cheddar and black olives are next on my list!

Ingredients for Pizza Muffins

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ⅛ cup sugar
  • 1 teaspoon baking powder
  • 2 eggs
  • ½ cup melted butter
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1 cup pepperoni, chopped (or mini pepperoni)
  • ¼ cup tomato sauce

Tip: Swap the pepperoni for more cheese or any other pizza topping.

  • Muffin tray
  • Non-slip mixing bowl
  • Measuring cups and spoons
  • Cheese grater
  • Whisk

How to Make Pizza Muffins

Preheat oven to 350F.

Line a muffin tray with liners and set aside.

In a bowl, whisk the all-purpose flour, baking powder, sugar and salt.

Form a well and then add in the eggs, melted butter, and milk. Mix well.

Fold in 1/2 cup of mozzarella cheese and 1/2 cup pepperoni.

Portion out 1/3 cup of batter into each muffin liner.

Top each muffin with 1/2 Tablespoon tomato sauce and a sprinkle of the remaining cheese and pepperoni.

Bake for 22-25 minutes, or until golden.

Remove from the oven and let them cool down before serving.
