Crispy Banana Fritters
My daughter and I love hosting our own Disney Movie Nights, and recently we planned a Jamaican menu to go with The Pirates of the Caribbean. For an authentic Jamaican dessert, we made these easy banana fritters.
These banana fritters are not fritters in the sense that I know them – I’m used to either crunchy crabcake-style fritters or chewy, filled donuts. These are more similar to a banana pancake recipe.
While the frying is safer to leave to a grown-up, kids can easily mash the bananas and mix together the batter, and then help with sprinkling sugar on the fritters after they are done cooking.
I love exposing children to other cultures through food, and these banana fritters were a huge hit in my house.

Do they stay well until the next day or so? Was hoping to make them the day before and just reheat for a party.
You can hold overnight, just re-heat in the toaster oven or oven to get them crispy again. Enjoy!
