Sparkly Unicorn Sugar Cookie Bars

Unicorn Sugar Cookie Bars Recipe
The “unicorn craze” isn’t going anywhere soon — and why should it?! We’re loving the bright colors, sparkles, and over-the-top details that make unicorn treats a hit with kids and grown-ups alike!
These Unicorn Sugar Cookie Bars are super easy to make (with a cookie mix shortcut) and SO much fun to decorate! Our photos are only meant to serve as inspiration — feel free to let your imagination run wild when you decorate your own!
Unicorn Sugar Cookie Bars Ingredients
For the Cookie:
- 1 bag of sugar cookie mix
- 1/2 cup of unsalted sweet cream butter, softened
- 1 large egg, room temperature
- 1/2 container of shiny edible pearl sprinkles
For the unicorn frosting:
- 1 cup unsalted sweet cream butter, softened
- 2-4 cups powder sugar, to taste
- 1 tsp vanilla
- 3-5 Tablespoons heavy whipping cream
- 2-4 drops of pink food coloring
- purple, green and light blue edible pearl sprinkles
- rainbow star sprinkles
Sugar Cookie Bar Directions
Preheat oven to 350°F.
Meanwhile, combine cookie mix, butter, egg and sprinkles in a large bowl and mix using a stand or hand mixer.
Line a 8″x11″ baking dish with parchment paper, then spray the parchment paper with non-stick cooking spray.
Place the cookie dough into the baking dish and pat down until the cookie fills the bottom of the pan.
Sprinkle some more pearls onto the top of the dough.
Bake for 20-25 minutes, or until golden brown
Sparkly Unicorn Frosting Directions
Using a standing mixer, combine all ingredients into the bowl and mix on medium speed. (If your frosting clumps up, add another tablespoon of heavy whipping cream.) Mix until you’ve achieved creamy stiffed peaks.
Add the pink food coloring, drop by drop, until you have your desired shade of pink.
Scoop frosting into decorating bag and pipe so that it covers the entire top of the cookie.
Sprinkle the surface of your frosting with star sprinkles as well as the tiny edible pearl sprinkles. Repeat step with the edible pearls.
Let cookie bars sit for 20 minutes, until ready to cut and serve.
