Rainbow Unicorn Popcorn
From unicorn donuts to unicorn fluff dip (and unicorn sugar cookie bars, and surprise inside unicorn bread) – and even a healthy unicorn frappuccino recipe, we have been whipping up just about every unicorn snack option this past year. The world has gone unicorn crazy and my 6 year old daughter is more than happy to join in the trend!
We used cotton candy-flavored candy melts for a kid-centric flavor. The crunchy popcorn and sprinkles work great with the smooth candy melts for a fun movie night snack.
We actually made this unicorn popcorn recipe for my daughter’s class bake sale and it was such a hit! The teacher even texted me that this and our cookies and cream popcorn were the first things to sell out – so you know the kids will go crazy for it.
This recipe is super easy for kids to make with a bit of help (when it comes to the air popper and using the microwave). Start making it about an hour before you want to enjoy it – or you can always put it in a sealed ziplock bag and enjoy it a couple of days later.
This easy and colorful popcorn recipe would be also perfect for any Spring themed event, Easter parties, baby showers, etc.

Ingredients
- 3-4 cups Popped Popcorn
- 1/2 cup Pastel M&Ms
- 1/2 cup Pretzel Sticks
- Candy Melts in various pastel colors (about 2 TB of each color)
- 1 Tablespoon Pastel Sprinkles

Instructions
Line a baking sheet (or two) with parchment paper or a non-stick silicone baking mat and set aside.
Pop popcorn and spread out in an even layer on the prepared baking sheet(s).
Scatter the rainbow M&Ms and pretzel sticks evenly throughout the popcorn, nestling into place.
Prepare each color of candy melt, according to package directions. We heat in microwave-safe bowls, in 20-30 second increments, stirring between, until melted and smooth.
Drizzle the melted chocolate on top of the popcorn.
Repeat with each candy melt color, ensuring that the popcorn is completely covered.
While the candy melts are still wet, evenly distribute the sprinkles overtop.
Allow the candy melts to set for 25 minutes before breaking up the popcorn to store or serve.
Makes 4-6 servings.

How Do You Store Candy Coated Popcorn?
The best way to store your candy coated popcorn is in a sealed airtight container, at room temperature. A large zip-top plastic bag is ideal because it allows you to squeeze out some of the air. The more air you can get out of the bag, the longer your popcorn will stay fresh — up to 2 or 3 weeks.
It is also important to keep your popcorn away from any heat or light sources, such as a window, to prevent melting.
What Are Candy Melts?
Candy melts are made with a combined of sugar, food coloring, and vegetable oil. They are designed to melt smoothly for making baked treats and decorating purposes.
Even though they look like colorful chocolate chips and melt like chocolate, candy melts actually aren’t chocolate at all!
However, they do melt and look like chocolate, so it’s easy to understand any confusion.
If you don’t have candy melts on hand, you can always melt white chocolate and add food coloring to make your colorful drizzle.
