Kid-friendly chicken quesadillas are a quick and easy meal made with simple ingredients. Chicken and cheese are layered in a flour tortilla and cooked until golden brown and melty.

Kid-Friendly Chicken Quesadillas

When it’s one of those nights where you need a quick and filling meal, quesadillas are a great option! My kids love them and we always have tortillas in the fridge, so quesadillas are one of our go-to recipes to get food on the table fast.

Why Quesadillas Are Great For Busy Nights:

  • Quick and Easy: With only a few minutes of prep time and a few minutes of cook time, quesadillas are almost as fast to make as re-heating leftovers. All you have to do is add your favorite toppings to a tortilla, fold, and cook!
  • Kid-friendly: Chicken quesadillas are easy for small hands and a low-mess meal. They are also a good source of protein (from the chicken) and calcium (from the cheese). You can also sprinkle in some hidden veggies to add even more nutritional value.
  • Versatile: Quesadillas are easy to customize to make use of what you have on hand in the fridge. They’re perfect for using up leftover chicken too! Make it a full meal by adding your favorite toppings, such as cheese, salsa, sour cream, or guacamole.
  • Budget-Friendly: Quesadillas are made with simple staple ingredients such as chicken, cheese, and tortillas.

Ingredients

This is one of our favorite ways to prepare chicken quesadillas, but you can substitute or omit any of the veggies to your personal preference.

  • 2 Large Flour Tortillas
  • 1 cup Shredded Cheese, of choice
  • 4 oz Chicken, sliced or shredded
  • 1 teaspoon Taco Seasoning (if chicken isn’t already seasoned)
  • 1 Tomato, diced
  • 1/4 cup Red Onion, diced
  • 1/2 Bell Pepper, diced
  • 1 Green Onion, Diced
  • 2 Tablespoons Oil or Butter

Instructions

Place the flour tortillas on a cutting board or clean surface and sprinkle the cheese overtop, going right to the edges.

Divide the chicken between the two tortillas, making an even layer on one side of the tortilla. If the chicken is unseasoned, sprinkle with taco seasoning.

One the opposite side of the tortilla, sprinkle the vegetables in an even layer – dividing equally among the two tortillas.

Fold the tortillas, chicken side over the vegetable side for ease.

Place the oil or butter in a large skillet over medium heat.

Place the folded tortillas in the oil and cook for 2 minutes per side, until lightly golden and the cheese is completely melted.

Makes 2 servings.

Prep Tips

  • The quesadillas pictured in this post were made with burrito-size flour tortillas. However, you can also use smaller taco-sized tortillas or even corn tortillas. When using smaller tortillas, I don’t fold them over when cooking, but instead layer everything on one bottom tortilla and place another tortilla on top.
  • This is a great recipe for rotisserie chicken or pre-cooked fajita meat – it’s a big time saver!
