Kids will love these mini biscuit pizzas! They’re easy to make with canned biscuit dough baked in a muffin tin!

Mini Biscuit Pizzas

If you ask my kids what they want for dinner, half the time they’ll say “chicken nuggets” and the rest of the time the answer is “pizza!!!”

Instead of ordering delivery (which is getting pretty pricey these days), why not try making these mini pepperoni pizzas at home? All you need are 4 simple ingredients, which you can get for about $10 at the grocery store.

These cute little biscuit pizzas are not only thrifty, but they’re easy to make too! The kids can totally help assemble the pizzas and add their favorite toppings. We started with the basic pepperoni and mozzarella cheese, but you can customize with your favorite pizza toppings.

How fun is that?!

These are essentially a mini deep dish pizza, with a delicious crust that’s chewy on the outside, fluffy on the inside. The middle of the pizza is filled with tasty tomato sauce, melty cheese, and mini pepperoni.

Not only do these mini kids pizzas make an easy dinner on a busy weeknight, they are also great for packing in a lunchbox.

Ingredients

  • Canned Biscuits
  • Tomato Sauce (or Pizza Sauce)
  • Shredded Cheese (we used mozzarella, but feel free to use your favorite cheese)
  • Mini Pepperoni

Instructions

To Prep: Preheat oven to 350F and coat a muffin pan with non-stick cooking spray or butter.

Place one biscuit into each cavity of your muffin pan. Press down to create a well in the center of each biscuit.

Spoon about half a tablespoon of tomato sauce in the center of each biscuit, then top with 1 Tablespoon of shredded cheese and three mini pepperonis.

Bake for 12 minutes, until crusts of the mini pizzas are golden brown.

More Topping Ideas

We used pepperoni and cheese to start, but you can put just about anything on your biscuit pizzas! Here are some of our favorite toppings:

  • Cheddar cheese
  • Ham and pineapple
  • Sausage
  • Mushrooms
  • Fresh basil
  • Black olives
  • Red pepper flakes (if you like a little spicy!)

Frequently Asked Questions

What Kind Of Biscuits Should I Used?

We used flaky biscuits, such as Pillsbury Grands. But generic or store brands work too! Make sure to separate into individual biscuits, but not pull apart the layers within each biscuit. If the biscuits are too thin, they may overcook.

Can You Freeze Biscuit Pizzas?

Yes, you can freeze your mini pizzas. I recommend placing them in a gallon size freezer bag. They’ll stay good in the freezer for 2-3 months.

To thaw and cook frozen biscuit pizzas, remove them from the plastic bag and place on a baking sheet in the oven. Set the oven to preheat to 300°F. When the oven reaches temperature, your pizzas should be warmed through. You could also use a toaster oven.

You can also refrigerate leftovers in an airtight container for up to 3-4 days. They are perfect for making a batch at the beginning of the week and packing in a lunchbox each day.
