Cookie Monster Cupcakes Ingredients

(Makes 24 cupcakes) For the cupcakes:

  • 1 box of milk chocolate cake mix
  • 3 eggs
  • 1/2 cup oil
  • 1 cup water

(Note: measurements for the eggs, oil and water may change based on which brand of cake mix you purchase)

For the frosting:

  • 1 cup unsalted sweet cream butter, softened
  • 2 1/2 cups powder sugar
  • 1 teaspoon vanilla
  • 3-5 tablespoons heavy whipping cream
  • 3-5 drops of royal blue food coloring

Toppings:

  • white candy melts
  • edible black marker
  • double stuff oreo cookies

For the cupcakes: Preheat oven to 350 and line cupcake pan with the liners. (We love these reusable silicon cupcake liners because they pop right out!)

In a medium bowl, combine the cake mix, eggs, oil and water and mix until mostly smooth.

Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full.

Bake in the oven for about 21 minutes (or according to directions on cake mix box). Remove from oven and allow to cool completely before frosting. For the frosting/toppings: In a stand mixer (or mixing bowl using hand mixer), combine the butter, powder sugar, vanilla and heavy whipping cream. Mix on medium speed until stiff peaks form.

If frosting is soft, add 1/4-1/2 C powder sugar little by little to thicken until you’ve achieved desired consistency.

Add in the food coloring 1-2 drops at a time until you get the shade of blue that you like. Set cupcakes aside while you prep the eyes.

Take two candy melts for each cupcake and the black marker. Using the marker, add black dots in the middle of the candy melts for the eyes. Scoop the frosting into the piping bag. Start piping frosting on cooled cupcakes from the edge to the center.

Add the eyes to the top of the cupcake, then cut an oreo cookie in half and place the cookie in the bottom part of the frosting where the “mouth” would be.
