Pistachio Fluff Salad Recipe
Pistachio Fluff is one of my kids’ favorite dessert dips – and I can’t blame them!
Pistachio Fluff is decadent with vibrant flavors (pistachio, pineapple, cherry and walnuts) and has an irresistible contrast of textures between the silky pudding, the fluffy marshmallows and the crunchy walnuts.
Not to mention that despite just all being thrown together in a bowl in less than 5 minutes, it is super cute and enticing.
Pistachio Fluff and Watergate Salad are the same thing, however Watergate Salad does have a bit more of a controversial name (invoking the 1970s Watergate Scandal that caused former US President Nixon to resign) rather than the pistachio dessert served at the luxurious Watergate hotel, which is more likely the cause of the name than the political intrigue.
I think the name Watergate Salad is fun and nostalgic, however it doesn’t really give any indication of what to expect from the recipe – so I tend to call it Pistachio Fluff, which more clearly evokes the flavors of the dish and indicates that it’s a dessert and not a leafy green salad.
Like many other mid-century American desserts, Pistachio Fluff endures because it’s a throwback to when everything was sweet, pastel-colored, unapologetically processed and easy peasy was the new motto in the kitchen.
Call it what you like (fluff, salad, dip – Watergate or not), I’ll just call it delicious!

Watergate Salad Ingredients

- 3.4 oz box instant pistachio pudding
- 20 oz can crushed pineapple, undrained
- ½ cup chopped walnuts
- 8 oz cool whip
- 3 cups mini marshmallows
- Maraschino cherries (optional topping)

How to Make Pistachio Fluff
To Prep: Gather your ingredients and a large mixing bowl.
- Combine the pistachio pudding mix, crushed pineapple with juices and chopped walnuts in a large bowl.
- Gently fold in the Cool Whip and mini marshmallows until evenly mixed.
- Cover and refrigerate for 2 to 4 hours to allow the flavors to set.
- Garnish with extra walnuts and maraschino cherries, if using.
Prep Tips
- Do not drain the pineapple. The juice is essential for activating the pudding mix and creating the signature fluffy consistency.
- Fold gently. Overmixing deflates the Cool Whip and turns the salad dense instead of light and cloudlike.
- Chill 2-4 hours minimum.
- Add marshmallows last. This keeps them from dissolving or becoming gummy during mixing.
- Toast the walnuts, if desired. A quick toast deepens their flavor and adds contrast to the sweetness.

Pistachio Fluff Salad (Watergate Salad)
Ingredients
- 3.4 oz box instant pistachio pudding
- 20 oz can crushed pineapple, undrained
- ½ cup chopped walnuts
- 8 oz cool whip
- 3 cups mini marshmallows

Instructions
- In a large bowl, mix together the instant pistachio pudding, crushed pineapple with juices, and chopped walnuts.
- Fold in the cool whip and mini marshmallows until well combined.

- Top with more walnuts and maraschino cherries before serving.
