Frosted Mint Chocolate Brownies

Made-from-scratch brownies topped with a cool mint frosting, chocolate mint brownies are a tasty treat that’s perfect for the holidays or anytime!

Chocolate Mint Brownies

Every year at Christmas time, my aunts do lots of holiday baking. One of my favorite holiday treats are chocolate mint brownies — the combination of cool peppermint and rich chocolate just feels so festive!

And while candy canes and peppermints are usually red and white, the mint frosting for our brownies is green, so it makes them stand out from the rest of the holiday treats.

These are cake-style brownies, so they are on the fluffy side (as opposed to more dense, fudge-style brownies). With the mint frosting, the have the look and taste of a sheet cake. Perfect for serving a crowd!

And while the original recipe has nuts, you are welcome to skip them. My aunts always made a pan of each: one with nuts and one without, so everyone was happy!

Ingredients

  • 1 cup All-purpose flour
  • 4 Tablespoons Butter, melted
  • ½ cup Cocoa Powder
  • 1/2 cups Dark Chocolate, melted
  • ½ cup Sugar
  • 2 Eggs
  • 1 Tablespoons Baking Powder
  • 2 Tsps Vanilla Extract
  • 1 cup Walnuts, chopped
  • 1/4 cup Chocolate Shavings

Frosting Ingredients

  • 2 ½ cups Vanilla Frosting
  • 2 teaspoons Mint Extract
  • 1-2 drops Green Food Coloring

Instructions

To Prep: Preheat oven to 350°F. Grease and flour a cake pan. Set aside.

  1. In a bowl, pour the melted chocolate, add the sugar, butter, and eggs and beat until incorporated (around 3 minutes).
  2. Continue whisking while adding flour, vanilla extract, pecans, cocoa powder, and baking powder.
  3. Pour the batter into the prepared cake pan and take to the oven. Bake for 35 minutes or until done.
  4. Remove from the oven, and let it cool until it’s no longer hot to the touch.

To Make the Frosting

  1. In a bowl, place the frosting and mix with the mint extract and the green food coloring.
  2. Frost the cake and top with chocolate shavings.
  3. Cut into squares, serve and enjoy.

Frequently Asked Questions

Can You Make These Without Nuts?

Sure! If you have a nut allergy or just don’t care for nuts in your desserts, you’re welcome to omit the walnuts. You’re also welcome to substitute for your favorite nuts, such as chopped pecans.

An alternative to the nuts could be chocolate chips to make the brownies extra rich!

Can You Use a Boxed Brownie Mix?

Absolutely! We love to use box mixes to save time! I find that most box mixes are fudge-style, so keep in mind that if you use a box mix, your finished brownies may look different than ours.

Do These Brownies Need To Be Refrigerated?

No, these brownies do not require refrigeration. I recommend storing in an airtight container, in a single layer, at room temperature.
