Creamy Pierogi Casserole

I love enjoying my pierogis with a side of sour cream, and recently while prepping white chicken enchiladas I thought how fun it would be to prepare pierogis in a similar way!

Now, the “secret white sauce” that I use on my white chicken enchiladas would be absolutely delicious for the sauce in this casserole – but for this version I just used sour cream. If you have the other ingredients on hand, definitely give my secret sauce a try!

You can also swap out the kielbasa or polish sausage for any sausage that you already have on hand, but I think kielbasa works delicious in this casserole recipe.

Browning the pierogis beforehand is an optional step, but I love the contrast of the crispy dumplings against the creamy sauce and pierogi fillings. The butter also adds just a bit more flavor to the recipe.

I like adding a teaspoon of hot sauce to the sour cream before adding it to the casserole, but that is optional. (And for even more spice you can add red pepper flakes.)

Pierogi Casserole Ingredients

  • 2 Tablespoon butter, optional
  • 20 pierogis, thawed or fresh
  • 1 1/2 cups sour cream
  • 1 cup cheese
  • 1 lb kielbasa or polish sausage
  • 2 green onions, chopped
  • 1 teaspoon hot sauce, optional

How to Make Pierogi & Kielbasa Casserole

Preheat oven to 350°F.

If you want to brown the pierogis first, place the butter in a frying pan over medium heat. Add the pierogis to the melted butter and brown, approximately 3 minutes on each side.

Place the pierogis in a large bowl.

Mix in the sour cream, sausage, 1 chopped green onion and 1/2 cup of cheese. If you are adding hot sauce, add it now.

Pour the pierogi mixture into a 9×9 casserole dish and top with remaining cheese.

Bake for 22 minutes until the cheese is completely melted.

Top with remaining green onions and serve.
