Healthy Banana Applesauce Muffins

Banana Muffins with Applesauce
Muffins are a great make-ahead breakfast for busy days. When you’re in a rush on a school morning, it’s so helpful to have something that you can grab and go, that’s not junk food or a drive-through!
These banana muffins are sweetened with honey and applesauce, so there’s no refined sugar…and no major sugar crash later! We also made them with gluten free flour.
Applesauce is a helpful baking ingredient that can be used to add moisture and sweetness to your muffins, without adding lots of sugar. (We used a sugar free applesauce).
The combination of ripe bananas and sweet applesauce makes these muffins incredibly moist. No dry muffins here! They’re almost foolproof!
This is a recipe that’s great for beginning bakers, or to make together with the kids. They also freeze well!
Ingredients
- 2 cups very ripe bananas (4-5 bananas)
- 1/2 cup applesauce
- 2 eggs
- 1/3 cup honey
- 2 Tablespoons coconut oil
- 2 teaspoons vanilla extract
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups gluten-free flour

Instructions
Preheat oven to 350°F and grease a 12-count muffin tin.
In a large bowl, combine the bananas, applesauce, eggs and honey, using an electric mixer.
In a small bowl, combine the coconut oil and vanilla extract. Mix into the banana mixture.
In a medium-sized bowl, combine the flour, baking powder, baking soda and salt. Add flour mixture to the banana mixture and mix until just combined and no dry patches of flour remain.
Portion 1/4 cup of batter into the prepared muffin pan, about 2/3 of the way full.
Bake for 18-22 minutes, until an inserted toothpick comes out clean.
Makes approximately 16 muffins.
Prep Tips
- To keep the sugar low, we used no sugar added applesauce. The apples are sweet already, plus with a touch of honey and ripe bananas, this recipe is plenty sweet!
- Using a silicone baking pan makes the muffins pop right out without needing any muffin liners.

Can You Freeze These Muffins?
Sure! These muffins freeze very well and last in the freezer for up to 2-3 months.
To freeze, wrap each muffin individually in plastic wrap or parchment paper. Then place the muffins into a gallon freezer bag.
When you’re ready to enjoy a muffin, you can pull one out of the bag and warm in the microwave or toaster oven.
Can You Use Regular Flour?
Yes, you can substitute regular all-purpose flour for the gluten-free flour in this recipe. You can swap the flours on a 1:1 ratio.
