Fruity Pebbles Cupcakes

Fruity Pebbles Cupcakes
Growing up, Cocoa Pebbles and Fruity Pebbles were my two favorite cereals. I loved that they flavored the milk in the cereal bowl so every bite was full of creamy, fruity deliciousness!
These Fruity Pebbles cupcakes taste just like a big bowl of Fruity Pebbles cereal and milk – there’s Fruity Pebbles mixed right into the cupcake batter and we sprinkled them on the frosting too!
Not only are they pretty and tasty, but these cupcakes are super easy to make too! That’s because we started with a box cake mix. It makes the recipe almost foolproof!

Ingredients
- 1 box white cake mix
- 1 cup Fruity Pebbles cereal
- 3.5-ounce box of white chocolate pudding mix
- 3/4 cup water
- 1/3 cup vegetable oil
- 4 large egg whites
Frosting Ingredients
- 1 1/2 cups salted butter, softened
- 1 teaspoon vanilla extract
- 3 Tablespoons heavy whipping cream
- 2 Tablespoons vanilla Greek yogurt
- 4 cups powdered sugar
- 1/3 cup Fruity Pebbles Cereal (for garnish)
Kitchen Tools You May Find Helpful
- Muffin Tin
- Cupcake liners
- Stand Mixer or Electric Hand Mixer
- 1 large piping bag with large round frosting tip
Instructions
To Prep: Preheat oven to 350 degrees F and place cupcake liners in a muffin tin.
In a large mixing bowl combine the cake mix, pudding mix, water, oil, and eggs. Using a hand mixer or stand mixer, mix on medium until well incorporated.
Fold in 3/4 cup of the Fruity Pebbles cereal.
Scoop the cupcake batter into the prepared pan, until each cupcake liner is about 2/3 full. Sprinkle a pinch of Fruity Pebbles on top.
Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.
Frosting Directions:
In a large mixing bowl or stand mixer, cream the butter until light and fluffy.
Slowly mix in the powdered sugar, 1 cup at a time, while adding in the vanilla and a tablespoon of the yogurt and cream in between each cup. Continue to mix for 1 minute or until creamy.
Fill your prepared piping bag with frosting. Frost your cupcakes. Top with a bit of the remaining Fruity Pebbles. Enjoy!
Prep Tips
- If you don’t have white chocolate pudding mix, you could also use vanilla flavored.
- Store cupcakes at room temperature in an airtight container.
- So the cereal doesn’t get soggy on top, I recommend waiting to frost and add cereal topping until you’re ready to serve.
