Carrot Cake Waffles Recipe
Belgian waffles are one of my favorite brunch treats.
I can’t stand soft, floppy waffles – I want crispy edges that hold up to a hefty drizzle of syrup and then tender, melt-in-your-mouth interiors – and the only way to get these results at home is to use a Belgian waffle maker.
We own both this one (seen in this post) and a this Mickey Mouse Belgian waffle maker – both are super easy to use and result in perfect Belgian waffles, everytime.
You can make this recipe on ANY waffle maker, just know that the waffle maker will affect the texture. They will still be delicious and perfect for slathering with our homemade cream cheese syrup (or whichever waffle toppings you prefer).
I love using cake mix to make waffles because:
- the batter is ready to use in 2 minutes, whereas from-scratch recipes usually need to rest for at least 30 minutes
- I don’t have to measure out a bunch of ingredients first thing in the morning
- less dishes
- an easy way to make uniquely flavored waffles
- turns out perfectly, every time!
This recipe makes a LOT of waffles, so extras can be stored in the fridge up to 3 days or frozen for up to 2 months.

How to Make Carrot Cake Mix Waffles
To Prep: Preheat waffle iron.
- Prepare the carrot cake mix according to the package directions.
- Spray the waffle iron with cooking spray and add the batter (about ½ cup, or as recommended by your waffle maker).
- Cook until golden and set, about 4 minutes.
- Repeat with remaining batter.
Prep Tips
- Let the waffle iron fully preheat before adding batter for crisp edges and even browning.
- Don’t overfill the iron, even if there are gaps, as too much batter can spill over and create uneven waffles.
- Grease the waffle iron between batches. Lightly spray the iron each time to prevent sticking, especially with sugary cake batter.
- Avoid lifting the lid early. Opening too soon can tear the waffle and release steam needed for structure.

Ingredients
- Boxed Carrot Cake Mix
- Plus Ingredients Called for on the Box
Instructions
- Preheat waffle iron.
- Prepare the cake mix according to package directions.
- Once the iron is preheated, spray with cooking spray and portion out about 1/2 cup of cake batter into the iron (or whatever your iron calls for).
- Cook for 4 minutes or until waffle iron indicates that your waffle is done.
