Overnight French Toast Casserole
Wake up in the morning to the delicious aroma of freshly baked French toast! This make-ahead recipe is perfect for busy mornings or leisurely weekends. Simply assemble and refrigerate the night before, then bake in the morning for a warm and comforting breakfast.
This is a fun recipe that kids can help prepare, made with simple staple ingredients. It’s also a great recipe to have on hand for company or holidays to save time!
Ingredients
- 1 French Loaf, torn into pieces (15oz)
- 1/3 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- 1 1/4 cups Milk
- 6 Eggs
- 1 teaspoon Vanilla Extract

Instructions
To Prep: Grease a 8″ x 8″ casserole dish.
Place all of the torn bread pieces into the casserole dish and set aside.
In a small bowl, mix together the brown sugar, salt and cinnamon.
Sprinkle the brown sugar mixture over the torn bread.
In a medium-sized bowl, whisk together the milk, eggs and vanilla extract until well-combined.
Pour the egg mixture over the bread, coating completely.
Cover the casserole dish with tin foil and place in the refrigerator overnight.
Preheat oven to 350F.
Bake the casserole with the tin foil on top for 20 minutes, then remove and continue to cook for 20-25 minutes until well browned and no uncooked egg remains. (An inserted toothpick will come out a bit damp but should not be wet.)
Makes 9 servings.
Prep Tips
- Bread – If you don’t have French bread, Brioche or Challah bread will also work well for French toast. You just want to make sure that the bread you use isn’t too thin or flimsy, or it will get too soggy.
- Dairy-Free Version – You can make this a non-dairy recipe by using your favorite plant based milk. I recommend using something creamy, like oat milk or cashew milk.
- Storage – After baking, keep any leftovers covered and refrigerated for up to 3 days. To reheat, place in an oven-safe pan (or use the pan in which you baked it) in the oven and press the preheat button. When the oven comes to temperature, the bread should be warmed through. You can microwave if necessary, but this can make it reheat unevenly.
