I never realized my daughter had never had store-bought Poptarts until this week.
I bought my favorite, the Brown Sugar Cinnamon ones, as a lunchbox treat and thought she would love them as much as I did… but I was sorely mistaken.
She found them dry, flavorless and just plain “ew” – and begged me to never buy them again!
Well, that’s more for me I guess – but to make it up to her, I thought I’d make a batch of semi-homemade poptarts as a special Valentine’s treat for her to share with her friends.
These easy poptart-inspired “pops” are a fun twist on classic handpies, using buttery pie crusts, sweet and juicy strawberry jam and pre-made strawberry frosting to create a mess-free treat on a stick that is perfect for Valentine’s Day party treats or a classroom contribution (if your school still allows fun).
Her verdict on these? Well, she ate the whole thing and handed me the stick when she was done without so much as an “ew” so I’m going to call that a win. To make them even better next time, I’ll use our homemade strawberry frosting from our Chocolate-Covered Strawberry Cupcakes recipe, but pre-made was a great option for recipe testing and making these in a flash.

Instructions
To Prep: Preheat oven to 350°F and roll out pie crust. Line a baking sheet with parchment or a silicone baking mat.
- Cut out heart-shapes: Use the heart cookie cutters to cut out heart-shaped pieces of the rolled-out pie crust.
- Add the filling: Add a tablespoon or so of jam or jelly to the center of half of the hearts.
- Make it a pop: Place a heart-shaped pie crust without filling on top of each filled heart, place a stick in the center and crimp the edges with a fork or simply press with your fingers to seal.
- Bake it: Set the pops on the prepared baking sheet and bake for 10 minutes.
- Cool and frost: Remove the baking sheet from the oven and allow to cool before frosting with the strawberry frosting and garnishing with sprinkles.

- 1/2 cup strawberry jelly or jam
- 1/2 cup strawberry frosting
- 2 Tablespoons sprinkles
Instructions
- Preheat oven to 350F.
- Line a baking sheet with parchment or a silicone baking mat.
- Roll out pie crust and use the heart cookie cutters to cut out heart-shaped pieces of the rolled-out pie crust.
