Shredded Carrot Salad Recipe
Creamy coleslaws are one of my favorite easy salad recipes to serve to my family, especially since there are so many ways to tweak and adjust them to personal preferences, plus they are great for introducing new flavors or veggies.
Today’s carrot salad recipe is a great way to add coleslaw, carrots, apples and cranberries to your family’s week, thanks to the homemade honey-apple salad dressing and the wonderful contrast of textures in this easy shredded salad.
The below recipe makes enough for 2 cups (approximately 4 servings) but it can be doubled and made ahead, if desired. If making ahead, I personally would add the shredded apples just before serving for the best texture.
Feel free to adjust this recipe according to your family’s personal preferences – use a different salad dressing, swap the cabbage for shredded lettuce, etc.

How to Make Creamy Carrot Apple Salad
To Prep: Gather ingredients and kitchen tools needed.
- In a large bowl, whisk together honey, apple cider vinegar, mayonnaise, salt, and pepper.
- Shred the cabbage, carrots and apples using a julienne peeler or box grater.
- Toss the shredded apples and vegetables in the honey dressing until well combined.
- Stir in dried cranberries and serve.
Carrot Apple Coleslaw Prep Tips
- Shred the apples last or have a small bowl of ginger ale, 7UP or pineapple juice set to the side to place the shredded apples in to prevent them from browning.
- Use crisp apple varieties like Honeycrisp or Gala which hold their texture and add natural sweetness.
- Shred the apples, carrots and coleslaw evenly.
- Taste the dressing first, adjusting sweetness or tang before adding the vegetables.

Creamy Carrot Apple Coleslaw
Ingredients
- 2-3 Medium Carrots, peeled
- 1/2 Small Cabbage
- 2 Apples
- 2 Tablespoons Honey
- 3 Tablespoons Light Mayonnaise, or more as desired
- 3 Tablespoons Apple Cider Vinegar
- Salt and Pepper, to taste
- 1/2 cup Dried Cranberries
Instructions
- Use a julienne peeler or box grater to shred the cabbage, carrots and apples. Set aside.
- In a large bowl, mix together the honey, apple cider vinegar, light mayonnaise, salt and pepper. Taste and adjust to personal preferences.
- Add the shredded veggies and toss to coat completely in the dressing.
- Stir in the dried cranberries and serve.
- Makes 2 large servings, or 4 small side servings.
