Easter Egg Fruit Pizzas
These mini Easter Egg Fruit Pizzas are made with sugar cookies, frosting, and colorful fruit. They’re as much fun to make as they are to eat!
Sugar Cookie Easter Egg Fruit Pizzas
Easter Egg Fruit Pizzas are a fun and festive Easter treat that incorporates healthy fruit. They are made with a sugar cookie crust, a layer of cream cheese frosting, and a variety of fresh fruit. The cookies are shaped like Easter eggs, and the fruit is arranged in a colorful design, just like decorated Easter eggs!
These cute little mini fruit pizzas are perfect for a potluck, Easter brunch, or any other occasion. Both the kids AND grown-ups will love them and they look so pretty on the dessert table.
This is also a great recipe for kids to help make because they will have so much fun decorating! You can switch things up with different types of fruit and create your own designs and patterns.

Ingredients
- 1 roll of sugar cookie dough
- Flour (for rolling cookies)
- 1 block cream cheese (8oz)
- 1 teaspoon clear vanilla extract
- 1/3 cup granulated sugar
- Diced strawberries
- Diced kiwi
- Whole raspberries
- Whole blueberries

Instructions
Bake the cookies first, then while they are cooling, you can make the frosting.
To Make the Cookies
- Cut the sugar cookie roll into 12 slices. Roll each slice into a ball and then place on a floured cutting board or countertop.
- Use the rolling pin to flatten the cookie dough balls to about 1/4 inch thickness.
- Use a rolling pin or your hands to flatten the dough to approximately ¼” thick, and then use a cookie cutter or a mason jar lid to shape the cookies into an oval shape.
- Place the cookies onto a non-stick cookie sheet, leaving space between each one so they can expand while baking. Bake according to package directions, until the cookies are golden brown and slightly crispy.
To Make The Frosting
- Add the frosting ingredients to a large bowl and mix until combined and creamy.
- Allow cookies to cool completely after baking, then spread a generous layer of frosting on top of each one.
- Make stripes on the eggs using the fruit.
- Use a different fruit to make different colors until all the cookies are covered.
Prep Tips
- While I generally like my cookies on the softer side, for this recipe you’ll want to over-bake them just a tad. A slightly harder cookie will hold up better to the weight of the fruit on top.
- We used about 2 Tablespoons of frosting per cookie. You want to make sure you have plenty of frosting to hold the fruit in place.
- Our fruit and design is just a suggestion…feel free to get creative with it! You can use almost any type of fruit that you have on hand.
- We used imitation vanilla because it is clear and the frosting will stay a bright white, which really sets off the colors of the fruit. If all you have is regular vanilla extract (which is golden brown in color) you can use that. The frosting will be a little bit more of an off-white color.
- The cookies can be baked and frosted in advance. However, I recommend waiting to add the fruit until you’re ready to serve.
