Kiss the Frog Cupcake Recipe

Disney’s The Princess and the Frog is one of my family’s favorite movies, and has irrevocably tied Mardi Gras and the classic children’s story in my mind.

So, with Mardi Gras coming up in just a couple of weeks, I thought we’d shared this easy 2-ingredient cupcake recipe so you can make your own “Kiss the Frog” cupcakes with your kids.

We simply mix together sprite and lemon cake mix for a tender, easy cupcake that has a vibrant lemon flavor and then top it off with a homemade lemon frosting (skipping fresh lemon and instead using flavor-packed lemon flavor extract).

This is one of my favorite ways to whip up a quick batch of cupcakes at a fraction of the cost – however, they can be a bit more messy and crumbly than traditional cupcakes as they don’t have eggs for structure.

Alternatively, you can just purchase pre-made cupcakes and allow the decorating to be your activity – no judgement here!

I hope your kids love getting to make their own kiss the frog cupcakes as much as mine did! They thought it was so silly!

Ingredients

For the Lemon-Lime Cupcakes:

  • 1 can of Sprite (or similar lemon lime soda)
  • 1-15oz Box Lemon Cake Mix

For the Lemon Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 2 teaspoons Lemon Flavor Extract
  • 1 to 2 tablespoons milk or heavy cream, as needed
  • Pinch of salt
  • Green gel food coloring, optional

  • Yellow and Green Sprinkles
  • Candy Eyes
  • Princess Candy Embellishments
  • Heart-shaped Sprinkles

  • Two Mini Muffin Pans
  • Measuring Cups and Spoons
  • Mixing Bowl

Instructions

To Prep: Preheat the oven to 350F and line two mini muffin pans with liners.

  1. Whip together the lemon cake mix and Sprite to make the cupcake batter.
  2. Bake the cupcakes as you prepare the simple lemon frosting.
  3. Dye the frosting light green and swirl onto the cupcakes.
  4. Allow the kids to decorate the cupcakes with sprinkles, candy eyes and candy crowns.

Prep Tips

  • Sift the powdered sugar for the frosting to prevent lumpy frosting.
  • Beat the cupcake batter for the full 2 minutes to ensure that no lumps remain and the cupcakes rise adequately. Underbeating can result in dense cupcake, especially since we’re skipping other leavening ingredients.
  • Check doneness visually and with a toothpick as ovens can vary; these 2-ingredient cupcakes are done when lightly golden on top and an inserted toothpick comes out clean with just a few crumbs stuck to it.
  • These cupcakes can be crumbly, so have plenty of napkins or small plates on hand for serving.

Ingredients

For the Lemon-Lime Cupcakes:

  • 355mL Sprite
  • 1-15oz Box Lemon Cake Mix

For the Lemon Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 2 teaspoons Lemon Flavor Extract
  • 1 to 2 tablespoons milk or heavy cream, as needed
  • Pinch of salt
  • Green gel food coloring, optional

To Decorate:

  • Yellow and Green Sprinkles
  • Candy Eyes
  • Princess Candy Embellishments
  • Heart-shaped Sprinkles

Instructions

  1. Preheat oven to 350F.
  2. Line 2 mini muffin pan with mini muffin liners and set aside.
  3. In a large bowl, beat together the white cake mix and Sprite for 2 minutes.
  4. Portion the cake batter into the prepared muffin liners.
  5. Bake for 12-18 minutes, until an inserted toothpick comes out clean.
  6. Allow the cupcakes to cool completely before frosting.

To prepare the frosting:

  1. In a medium bowl, beat the butter until smooth and creamy.
  2. Add powdered sugar, lemon flavoring and salt. Beat until fully combined.
  3. Add milk or cream a little at a time, beating until the frosting is light, smooth and easily spreadable.
  4. Tint with a drop or two of green gel coloring, mixing well and adjusting until you reach a pale green shade.
  5. Scoop the frosting into a piping bag fit with a large star tip and swirl onto the cupcakes.
  6. Allow the kids to decorate the cupcakes with sprinkles, candy eyes and candy crowns.
