Our third and final Lucky Charms dessert for the year, this Lucky Charms Chocolate Bark is a fun and easy recipe to make with kids. Enjoy it on it’s own or use to top cupcakes for a fun and festive edible cupcake topper.

No Bake St Patrick’s Day Recipe

To make our Lucky Charms Cupcakes and Lucky Charms Cake, I had to separate out an entire box of Lucky Charms cereal from it’s marshmallows… so you better believe that I am going to use up ALL of those marshmallows in as many different Lucky Charms desserts as I can – there is no way that I am just going to mix them back in with the cereal after all of that effort!

One of my favorite ways to use up leftover baking supplies (like sprinkles, coconut flakes, dried fruit, chocolate chips, etc) is to make a chocolate bark.

It’s simply chocolate (or candy melts) melted and smoothed down into a thin layer, then topped with a variety of yummy toppings. It’s very similar to peppermint park, only the sky is the limit when it comes to flavors and toppings.

This Lucky Charms Chocolate Bark is a fun and colorful dessert that takes less than 8 minutes to whip up! My daughter was so excited to help me make it and then bring it over to her grandparents house to share – I definitely think ours turned out pretty enough to gift!

How to Make Lucky Charms Chocolate Bark

  1. Line a baking sheet and melt the white chocolate until smooth.
  2. Spread the melted chocolate into an even rectangle on the prepared sheet.
  3. Melt the green candy melts, dollop over the chocolate, and marble together.
  4. Top with marshmallows and sprinkles, let set for 1 hour, then cut and serve.

Does Chocolate Bark need to be refrigerated? Nope, after the bark has hardened and been broken up into pieces, you can store it in a sealed container at room temperature (as long as your house isn’t too hot). Storing in the fridge will cause the bark to sweat and melt quicker when brought to room temperature.

How long does homemade chocolate bark last? This Lucky Charms chocolate bark will last for 2-3 weeks in a sealed container at room temperature.

Lucky Charms Chocolate Bark

A fun and festive St Patrick's Day dessert the kids can help make - and it takes less than 10 minutes from set-up to clean-up! This Lucky Charms Chocolate Bark is a sweet treat perfect for any fan of those cute little marshmallows.

Ingredients

  • 2 cups White Chocolate Chips (can use white candy melts)
  • 1/3 cup Green Candy Melts
  • 1/2 cup Lucky Charms Marshmallows, or more to taste
  • 2 Tablespoons Sprinkles

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Place white chocolate in a heat-proof bowl and place over a pot of boiling water.
  3. Whisk the chocolate until melted, about 2 minutes.
  4. Once chocolate is melted, scoop into the center of the lined baking sheet.
  5. Use an offset spatula to spread the chocolate into a 1/4" thick rectangle.
  6. Place the green candy melts in a microwave-safe bowl and heat 25 seconds. Stir and reheat as needed.
  7. Place the green candy melts in dollops over the white chocolate and use the offset spatula to marble the chocolate and candy melts together.
  8. Immediately distribute all of the marshmallows evenly over the bark and then garnish with sprinkles.
  9. Allow chocolate to set for 1 hour before cutting into pieces and serving.
