Valentine’s Day Hot Chocolate Bombs (with Video)

What’s inside: a fun Valentine’s Hot Chocolate Bomb you can surprise the kids with or give out as homemade Valentine’s classroom treats. These little spheres melt in a warm mug of milk to make a rich and delicious cup of hot chocolate.

Valentine Hot Chocolate Bomb Recipe

How adorable are these bright and cheery Valentine’s Day Hot Chocolate Bombs?!

These candy-coated hot chocolate bombs are perfect for those who (like my daughter) find regular hot chocolate bombs too rich and chocolately. (I know, that’s apparently a thing.)

My daughter gets so excited about using a hot chocolate bomb, but the chocolate-covered version is too rich for her and she usually loses interest after a few sips. This candy version, however, gives a pop of cocoa flavor from the added hot chocolate mix and some sweetness from the melted candy coating that is just perfect.

Plus, it’s such a fun Valentine’s Day treat and incredibly easy to make! You could surprise your family with them for a Valentine’s dessert or movie night, or hand them out as homemade Valentine’s to friends and neighbours.

You can also use this basic method to make a variety of different themed hot chocolate bombs by swapping out the candy melt color and sprinkles.

How to Use a Hot Chocolate Bomb:

You can use your hot chocolate bomb two ways:

  • Place the hot chocolate bomb in a mug and pour warm milk overtop
  • Place the hot chocolate bomb in a mug already filled with warm milk

The warm milk will slowly melt the hot chocolate bomb, releasing the powdered cocoa, sprinkles and marshmallows inside.

How to Make Hot Chocolate Bombs

Place red candy melts in a microwave-safe bowl and melt in the microwave in 30 second increments, stirring in between, until completely melted and smooth. 

Add a spoonful of melted candy to each mold, using a spoon to spread the candy to cover the inside of the spheres. 

Place the mold in the fridge or freezer for about 5-10 minutes or until they are easy to pop out. If they seem fragile, add another layer of melted chocolate before removing from the molds and re-freeze.

Very carefully remove the half spheres from the mold.

Scoop about 2 tsp of hot cocoa powder each into three of the half-spheres. Place 7-8 mini marshmallows on top of the hot cocoa powder.

Heat a plate in the microwave for about 45 seconds. Remove carefully, as the plate will be hot (we need it to be hot to melt chocolate).

Safety Note: Adults should handle this step and anything that involves removing hot items from the microwave.

Take an empty half-sphere and press the open part onto the hot plate for a few seconds to melt the chocolate and twist to smooth the edges. Place on top of one of the hot cocoa-filled half-spheres and hold until the seal and harden together.

Repeat to make all three hot chocolate spheres.

Place white candy melts in a microwave-safe bowl and melt in the microwave in 30 second increments, stirring in between until melted and smooth.

Put melted white candy melts in a ziptop sandwich bag, seal and snip off a corner. Pipe the melted white chocolate across the top of the cocoa bombs and immediately add a pink and red heart in the middle and sprinkle the pink and red ball sprinkles before the melted chocolate hardens. Place in the fridge or freezer for a few minutes to allow it to harden.

To Enjoy Your Cocoa Bombs

To use, place one of the Valentine’s Day Cocoa Bombs in a large mug and pour hot milk over top. The chocolate will start to melt right away and the marshmallows will “explode” to the top!

Stir until the hot cocoa bombs are completely melted and enjoy!

Ingredients

  • 3/4 cup Red candy melts, melted
  • 1/4 cup White candy melts, melted
  • 2 Tablespoons Hot Cocoa Mix
  • 20 Mini Marshmallows
  • 1 Tablespoon Valentine’s Day sprinkles

Instructions

  1. Place red candy melts in a microwave-safe bowl and melt in the microwave in 30 second increments, stirring in between until completely melted and smooth. 
  2. Fill the silicone sphere molds with the melted candy using a spoon to ensure even coverage. Pour out any excess  candy melts.
  3. Place the mold in the fridge or freezer for about 5-10 minutes or until they are easy to pop out. Very carefully remove the half spheres from the mold. (If they don't pop out easily, place back in the fridge or freezer for a few more minutes.)

Have you ever made your own homemade ice cream? There are lots of gadgets and ice cream makers for sale, but you actually don’t need any fancy equipment to make ice cream at home!

All you need are 4 simple ingredients and a few basic supplies to make ice cream in a bag! That’s right, you can make real homemade ice cream in a ziplock bag!

This is such a fun summer activity for kids because they can take the bag outside and shake it around, toss it, etc. In other words, they’ll burn lots of energy!

And when it’s all done, they can cool off with the delicious and refreshing ice cream they made!

How it Works: The Science Behind Ice Cream in a Bag

The cool thing (see what I did there?) about making ice cream in a ziplock bag is that it is a science lesson too!

The ice in the ziplock bag has to absorb energy from its environment in order to melt. Adding salt to the ice lowers the freezing point of ice from 32°F to about 20°F, so the ice needs to absorb even more energy to melt.

The ice absorbs heat (energy) from the ice cream ingredients which it comes into contact with, as well as the outside environment. As the ice absorbs heat from your ingredients, the ice cream begins to freeze.

So not only is ziplock bag ice cream lots of fun, but you can feel good about this treat in particular because it has educational value too! Win-win!

Ice Cream in a Bag Ingredients

  • 2 Tablespoons sugar
  • 1 cup half and half
  • 1/2 teaspoon vanilla extract
  • 1 1/2 Tablespoons chocolate syrup

Supplies Used:

  • 1 gallon freezer bag
  • 1 quart freezer bag
  • Ice
  • ½ cup rock salt
  • Baggy Rack sandwich bag holder

Open a quart size bag and add sugar, half and half, vanilla extract and chocolate syrup. Seal the bag.

TIP: We love these handy Baggy Rack freezer bag holders because they keep the bag open and upright while we mix ingredients. There’s way less chance to make a mess!

Open gallon ziplock bag and fill halfway with ice. Sprinkle ½ cup of rock salt over the ice.

Place your quart sized bag inside the gallon bag and seal.

Double-check your bags to make sure they’re well-sealed. Shake the bags vigorously until ice cream forms. Enjoy!

At Christmas every year we get a big box of treats from my aunt and uncle. The girls LOVE to open the box and see all the goodies inside!

One of the treats that is included every year is chocolate and caramel coated popcorn. Oh my goodness…it is absolutely amazing!! 

We love chocolate covered popcorn so much that we make it at home regularly. It’s the perfect movie-night snack that both grown-up and kids alike enjoy.

Since flavored popcorn is such a hit in our house, I’m super excited to share this Jello popcorn recipe. It’s perfect for Spring or Summer because of the bright colors!

The Jello mixture forms a candy coating on the popcorn, so not only is it bright and festive, the Jello popcorn has a crave-able candy crunch.

You can customize this candy coated popcorn recipe by using any flavor of Jello you like. Wouldn’t it be fun to make for a birthday party or a baby shower?

Jello Popcorn Ingredients

  • 9 cups popcorn, popped
  • 9 Tablespoons butter
  • 3 cups sugar
  • 2-3 Tablespoons each: red Jell-O, purple Jell-O, yellow Jell-O
  • 3 Tablespoons white corn syrup
  • 3 tbsp water, as needed
  • Food dye, as needed

Tip: Be sure to use regular Jello (as opposed to sugar free) because the sugar is what makes that yummy candy coating!

How to Make Jello Popcorn

Line 3 cookie sheets with parchment paper and preheat oven to 300F. Spread 3 cups of popcorn out in an even layer on each cookie sheet. Set aside.

In a medium saucepan over medium heat, combine 3 Tablespoons butter, 1 cup sugar, 1 Tablespoon white corn syrup and one color of the Jell-O powder. Bring to a boil.

TIP: If mixture is too thick, add a bit of water. You can also add food coloring to brighten. Both are optional.

Boil for candy mixture for 3-4 minutes, over one cookie sheet of popcorn.

Bake candy-coated popcorn for about 10 minutes, stirring once halfway through. Remove from oven and allow to cool.

Repeat with each color of Jell-O.

TIP: If you’re short on time, you can make one big batch of popcorn, all one flavor.

Avocado “Nice Cream”

Mint chocolate chip is one of my favorite flavors of ice cream. However, since I found out I was lactose intolerant in college, I’ve pretty much had to say bye-by to this summertime treat.

While there are some truly delicious dairy-free alternatives in the frozen aisle these days, I’ve yet to find a nondairy mint chocolate chip ice cream that passes the test for me.

So why not just make our own?!

One of the things you have to look-out for when shopping for non-dairy ice creams is the sugar content. Just because they’ve omitted dairy doesn’t mean they’re actually healthy! Some of those dairy-free ice creams still have a lot of sugar.

That’s why I love this homemade avocado ice cream — not only is it dairy-free, but it’s sweetened naturally with honey, and only lightly so! That’s why we call it nice cream!

It’s a guilt-free treat that the whole family will love!

Avocado Ice Cream Ingredients

  • 2 avocados, pitted and halved
  • 1/2 cup honey
  • 1/2 cup coconut milk
  • Pinch salt
  • 2-3 drops mint extract
  • 1/2 cup dairy free chocolate chips

Note: you can use mint extract or fresh mint – for fresh mint, use a small handful.

Kitchen Tools Used to Make this Recipe

  • High powered blender
  • Loaf pan
  • Ice cream scoop

How to Make Avocado Ice Cream

Cut avocados in half and remove pit. Scrape avocado flesh into high-powered blender or food processor then add honey, coconut milk, salt, and mint extract.

TIP: We suggest starting with 2-3 drops of mint extract because it is usually pretty strong, but you’re welcome to add more if you like your ice cream extra minty.

Blend until smooth and creamy.

Stir in chocolate chips by hand, then pour avocado ice cream batter into a small loaf pan. Use a silicone spatula to smooth the top of the ice cream.

Freeze 2-4 hours. Scoop as you would regular ice cream and enjoy!

Edible Gummy Bear Slime (Only 3 Ingredients!) – with VIDEO!

What’s inside: An exciting edible gummy bear slime recipe that’s squishy and stretchy…yes, it’s really made with gummy bears!

Slime is one of our all-time favorite sensory materials and we wanted to make one that was not just taste-safe but completely edible and delicious!

This gummy bear slime is the perfect slime for birthday parties, mixed age groups, or a fun rainy day sensory activity.

Edible Gummy Bear Slime Recipe

My daughter has been obsessed with slime for 3 years now, so I’m kind of shocked it’s taken us this long to make a delicious edible slime! (The “taste safe” ones we made before this were definitely not delicious…)

We tried 6 different candies to make the perfect candy slime and while this candy slime was our favorite for texture, this Edible Gummy Bear Slime was waaay easier to make, the slime lasted longer and it didn’t involve cooking – just a quick zap in the microwave.

The final product is a stretchy, marshmallow-like slime that smells amazing and tastes delicious. It was a bit thick and tacky, but it kept in a sealed container for a couple of days which I thought was awesome for how little work was involved in making the recipe.

(It’s not sticky though – no little pieces stuck to our hands, it was just tacky. You can always coat your hands in cornstarch or oil if the tackiness bothers you.)

This slime takes less than a couple minutes to make, and you can make several different flavored batches so each kid can have their own color to play with (and then you don’t have to worry if they are tasting or licking the slime, because at least you know which one is theirs!)

What is gummy bear slime like?

This is not an oozy, drippy, get-everywhere slime. It’s kind of like pulling taffy – it stays together and you kind of need to pull and stretch it to see it’s slime-like properties.

I actually prefer this cohesive texture when making it for young kids so it’s not a giant mess to clean up after they are done with their slime sensory play.

For best results, use a microwave safe bowl for cooking the gummy bears (plastic could melt). Grown-ups should handle that part of the process.

  • 1 cup gummy bears

Heat the gummy bears in the microwave for 10-15 seconds, stir, and reheat as necessary to break down the gummy bear shape. (Be sure to use a microwave-safe bowl and handle carefully).

Stir and then knead in your icing sugar and cornstarch in equal amounts, until the gummy bear slime forms a cohesive dough/slime consistency.

The more you add, the less sticky the slime will be – but also the more you add the thicker and less stretchy it will be, so try to find that perfect sweet spot.

TIP: Add a small amount of coconut oil if you want the gummy bear slime to be a bit stretchier.

The slime is a bit tacky, so if that bothers you, have some extra cornstarch or oil on hand to coat your hands with. The more you play with any edible slime, the stickier it can get so you may need to add more cornstarch/icing sugar to the slime if you find that it’s getting sticky (and not just a bit tacky).

Stretchy gummy bear slime made from 3 ingredients - it's edible!

  • 1 cup Gummy bears
  • 2 TB Cornstarch
  • 2 TB Powdered sugar

Instructions

  1. Microwave gummy bears in a heat-safe bowl for 10-15 seconds. Stir, and continue heating in 10-15 second intervals until gooey.
  2. Stir in powdered sugar and cornstarch in equal amounts, until the gummy bear slime forms a cohesive ball.
  3. When your gummy bear slime is too tough to stir with a spoon, finish kneading by hand.
  4. Add more cornstarch little by little (if needed) so that slime no longer sticks to hands.

Heart-Shaped Chocolate Chip Cookie Dough Truffles

My girls love to make chocolate-dipped desserts – we make them for every occasion!

Many times we use cookies because they’re already made and easy to dip, like our Polar Bear Oreos or Valentine Teddy Bear Oreos.

This time we decided to try something a little bit different by making our own cookie dough and then dipping it in chocolate, without baking. I mean, who doesn’t love to eat cookie dough right out of the bowl?

PS- There are no eggs in our chocolate chip cookie dough, so it’s safe to eat without baking!

This is a super easy recipe and since there is no oven involved, kids can help every step of the way.

We’ve included a helpful video tutorial in the recipe card at the bottom of the post so you can see exactly how we made our Chocolate Chip Cookie Dough Hearts.

Make a batch for your favorite teacher, grandparents, neighbors, and friends. Be sure to do plenty of taste-testing as you go…wink, wink!

No Bake Chocolate Chip Cookie Dough Hearts

Safety Note: Because raw flour poses the risk of food-borne illness, always use heat-treated flour or bake your flour for 5 minutes at 180°F before mixing into your cookie dough.

If your cookie dough is still a bit dry after mixing, you can add 2-3 Tablespoons of water to soften it.

After you add chocolate chips to the cookie dough batter, you may want to finish kneading by hand.

TIP: If you can’t find Ghirardelli chocolate melting wafers in your grocery store, you can also use regular chocolate chips for the coating.

When dipping your cookie dough hearts in the melted chocolate, chopsticks are one of our favorite tools. However, you can also use a fork or spoon – whichever is easiest for your kids to handle.

We love these non-stick silicone baking mats becuase when the chocolate dries, your truffles will just pop right off! You can also wash them and reuse them over and over!

Allow chocolate to set for at least 30 minutes before enjoying – you can place the cookie dough truffles in the fridge to speed up the process if you like.

No bake chocolate chip cookies dough hearts are a fun and easy Valentine's Day treat that kids can make!

Ingredients

  • 1 cup flour (plus 2 Tablespoons)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/4 cup unsalted sweet cream butter, softened
  • 6 Tablespoons sugar
  • 6 Tablespoons brown sugar
  • 1/2 teaspoon vanilla extract
  • 3 Tablespoons cold water
  • 1 1/2 cups mini chocolate chips
  • 1 mini heart cookie cutter
  • 8oz bag of Ghirardelli melting chocolate wafers
  • 1 container of V-day sprinkles

Instructions

  1. Combine the flour, baking soda, salt, sugar, brown sugar, butter and vanilla in a large mixing bowl. If dough is still crumbly, mix in 2-3 Tablespoons cold water.
  2. Stir chocolate chips into batter.
  3. Prepare two cookie sheets with parchment paper or non-stick silicone baking mats. Set one aside.
  4. Place dough onto one cookie sheet and flatten the dough to about 1/2 inch thick.
  5. Refrigerate cookie dough for 20 minutes.
  6. Remove dough from fridge and using the cookie cutter, cut out your hearts.
  7. Place chocolate chip cookie dough hearts onto a plate and refrigerate an additional 10 minutes.
  8. Using a microwave safe bowl, melt the Ghirardelli wafers in intervals of 30 seconds, stirring in between. Handle with care, as bowl may become hot.
  9. Dip each heart into the melted chocolate and turn until completely coated. Allow excess chocolate to drip back into the bowl, then place hearts on your second prepared cookie sheet.
  10. While chocolate is still soft, coat the top of your hearts with sprinkles.
  11. Allow chocolate to set for at least 30 minutes before enjoying.

Edible Candy Corn Slime Recipe

There’s something about candy corn that is so fun and nostalgic – but let’s be honest, it’s gross. (Ok, to be fair, it’s one of those love it or hate it things…our girls always want it!)

My daughter begs me to buy a bag every year, and without fail, we get it home and quickly remember how much we don’t like it.

So, stuck with a bag of candy corn that we were not going to eat, I decided to get creative and started experimenting with various concoctions to try to make a fun edible candy corn slime.

I initially wanted to just use melted candy corn to make a edible candy slime similar to my (now viral) Starburst Candy Slime recipe, but the candy corn hardened really quickly using that method.

However, mixing the candy corn into our Marshmallow Slime recipe ended up being perfect! It still hardens a bit faster than our other candy slime recipes, but you can easily return it to it’s former stretchy state by warming it up in the microwave (just be super careful as it can get hot quickly).

This super simple candy corn slime can be made in a couple different ways.

I wanted to have those pretty stripes for the pictures so I chopped up the candy corn and made a yellow and an orange batch, but you can simply mix it all together for one big batch of orange edible candy slime.

You can also microwave the candy corn right away with the marshmallows, or mix them in halfway through – I prefer to just get it all zapped together in the first place (even if it resembles molten lava for a couple minutes).

This recipe does get HOT so I do not recommend having children help with the heating stage or the kneading stage until you have checked that the slime is no longer hot.

However, once you’re done, the results are a fun stretchy edible candy slime that tastes like candy corn marshmallows!

Ingredients for Candy Corn Slime

  • 1 cup candy corn
  • 1 1/2 cups marshmallows
  • 1-2 Tablespoons vegetable oil
  • 1 1/2 cups powdered sugar, as needed

Tip: this edible slime can be stored in a ziplock bag in between uses and reheated for 25 seconds when you want to play again. It will get hot, so a grown-up must check it before handing it off to kids. You may need to add more powdered sugar as you play and you may want to rub some oil on your hands if your hands get sticky.

If making a two-tone striped candy slime, chop off the white and yellow ends of the candy corn and place in a small bowl. Place the orange centers in a second bowl.

Combine 1/2 Tablespoon of oil, 3/4 cup of marshmallows and one color of the candy corn in a medium-sized microwave-safe bowl.

Zap for 25 seconds, stir well, and reheat as needed.

(If just making one color of candy corn slime, combine 1 Tablespoon of oil, 1 1/2 cups marshmallows and 1 cup candy corn together.)

When the marshmallows are completely melted, stir in a couple tablespoons of icing sugar. The mixture will be hot so be careful.

Fold the molten lava (I mean, candy corn mixture) onto a cutting board and when cool enough to knead, knead with the icing sugar until not sticky.

Repeat with second color batch.

Who doesn’t love a cream fudgesicle on a hot summer day?

When I found out I was lactose intolerant in college, I was devastated to think about a life without fudgesicles and other frozen treats!

Fortunately, there are some pretty amazing non-dairy fudgesicles and the like on the market these days, but they are usually not cheap.

That’s why we love to make our own dairy free fudgesicles at home! Not only is it a more cost-effective way to treat yourself, but you know exactly what goes into your food.

And in this case, it is only 5 simple, natural ingredients!

Even if you’re not lactose intolerant, these avocado fudgsicles make a delicious (and healthier) substitute to store-bought frozen desserts. Plus they’re kid-approved! My daughters are not fans of regular avocados, but when incorporated into desserts like our favorite fudge-y Avocado Brownies or Mint Chocolate Chip Avocado Ice Cream, they scarf them down and ask for more!

Avocado Fudgsicles Ingredients

  • 2 avocados (or about 1 cup)
  • 1 cup cashew milk (or other non-dairy milk)
  • 1 teaspoon vanilla bean paste
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup pure maple syrup

  • More than 10% daily value of 7 vitamins and minerals, plus small amounts of many others
  • 15 grams of healthy “good” fats, which can help your body absorb nutrients

How to Make Healthy Chocolate Avocado Popsicles

Place all ingredients into a food processor and puree. You can also use a large mixing bowl with a hand mixer or a stand mixer for this step.

TIP: We love vanilla bean paste for its rich, concentrated flavor. However, if you don’t have this particular ingredient on hand, you can substitute 1:1 with vanilla extract.

For the cashew milk, start with 1/2 to 3/4 of a cup, gradually adding more as needed, until the mixture is smooth.

TIP: We used cashew milk because it has a creamy consistency that works especially well in non-dairy frozen desserts, however you are welcome to use the dairy free milk of your choice.

Pour avocado fudgesicle batter into popsicle molds (or pour first into a measuring cup and then use that to easily pour into popsicle molds without messes). Insert popsicle sticks.

TIP: Silicone popsicle molds release your Avocado Fudgesicles (or any frozen pop you make) easily!

Freeze at least 2-4 hours.

To release your popsicles, run the mold under warm water for 20-30 seconds and they should pop right out!

However, it’s actually super easy to make your own “good for you” version of the classic fudgsicle recipe!

  • Maple syrup has a low glycemic index compared to other sweeteners

You don’t need anything fancy to make our healthy fudgsicles – just three simple, real-food ingredients. (You might already have them on hand at home!)

But don’t let looks fool you, these “Zombie Guts” are actually super delicious red velvet cinnamon rolls! They’re perfect as a ghoulish Halloween party treat or a surprise for your favorite Walking Dead fans.

“Zombie Guts” Halloween Cinnamon Rolls

My husband is a huge fan of “The Walking Dead” (both the TV show and original comic series). I knew he would get a kick out of these goofy & gory Zombie Guts cinnamon rolls!

Kids also love this gross-out dessert because it looks just like “guts” of course! And tastes amazing!

Zombie Guts Cinnamon Rolls Ingredients

  • 2 tsp active dry yeast
  • 1 tbsp brown sugar
  • 1 ¾ cup warm water
  • Pinch of salt
  • 1 tsp red food coloring
  • 1.5 cups red velvet box cake mix (dry)
  • 2.5 cups flour

For the Filling:

  • ⅓ cup melted butter
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 1-3 tsp milk

How to make “Zombie Guts” with Red Velvet Cinnamon Rolls

Prepare the dough:

Combine yeast, brown sugar, and warm water in mixer bowl. Whisk thoroughly and sit for at least 5 minutes until bubbly.

Add in salt, box cake mix, optional food dye and flour a little at a time, mixing in between with a dough hook until you have a dough texture.

Scrape the sides, roll into a ball, cover, and let rise for 1 hour.

Make the “Zombie Guts”

After an hour, flour a large surface and knead for a few minutes, then roll out into a large rectangle. Cut sides that are uneven.

Mix together melted butter and brown sugar, and sprinkle over your dough. Sprinkle cinnamon as evenly as possible. Flatten with a rolling pin.

Roll up into one long roll, then cut every 2 inches. Once rolled, unroll each of them and fold in half.

Arrange in a greased 8×8 inch baking dish so that it looks like “guts.” Cover and let rise another 45 minutes.

While dough rises, preheat oven to 350°F.

Bake & Frost:

Remove cover from dough and bake at 350°F for 25 – 30 minutes.

Once finished cooking, whisk together glaze ingredients in a medium mixing bowl and drizzle over rolls.

Cut and serve.

Fall is my favorite season, in no small part due to the desserts! I look forward all year to those spicy flavors like pumpkin and cinnamon! I loooove pumpkin swirl cheesecake, but sometimes I don’t want to spend all day baking.

This pumpkin bundt cake recipe is one of my favorites because it incorporates a sneaky box cake shortcut that’s just about impossible to mess up. It saves time and energy and creates a perfectly springy cake every single time!

Pumpkin spice cake ingredients:

  • 1 package yellow cake mix
  • 1/2 cup white sugar
  • 1/2 cup vegetable oil
  • 1 15oz can pumpkin
  • 1/4 cup water
  • 1 teaspoons ground cinnamon
  • 3 eggs, room temp

For the warm vanilla glaze:

  • 1 cup powder sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup whole milk, as needed
  • 1 teaspoon vanilla

Tip: If you’re a die-hard pumpkin fan, feel free add 1-2 teaspoons of pumpkin pie spice to the cake mixture for extra flavor!

How to Make an Easy Pumpkin Bundt Cake

Preheat oven to 350°F. Grease a bundt pan and set aside.

In the bowl of a stand mixer add all cake ingredients and beat on medium speed for 2 minutes or until well combined.

Pour batter into bundt pan and bake for 40-50 minutes, until an inserted toothpick comes out clean.

Summer is blueberry season, so there’s lots of gorgeous ripe berries in the stores right now! What better way to take advantage of the season than to bake a fresh blueberry loaf?

We incorporated over two cups of fresh blueberries into this recipe, so it’s bursting with fruit flavor! The blueberries also create a gorgeous color.

If you love muffins, then you’ve got to try this blueberry loaf! It’s even more fresh blueberry goodness!

Ingredients for Baked Blueberry Loaf

  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 2 eggs
  • 1 Tablespoon vanilla
  • 1 cup milk
  • 2 cup flour
  • 2 teaspoons baking powder
  • 2 1/2 cups fresh blueberries

How to make fresh blueberry loaf:

Preheat oven to 350°F. Prepare loaf pan by coating with non-stick cooking spray or butter.

In a standing mixer, cream the butter and sugar until fluffy. Add in the eggs, vanilla and milk and continue mixing.

Gradually add in the dry ingredients and mix until well combined.

Stir in blueberries by hand, to prevent crushing.

Pour batter into the loaf pan. Bake for 1 hour (give or take 5 minutes depending on your oven), until a toothpick inserted into the loaf comes out clean.

Remove pan from oven and place on a cooling pan until it is cool enough to handle. Carefully slide blueberry loaf out of the pan, slice, and enjoy!

If you really want a treat, batter your slices in whipped eggs and make blueberry French Toast!

Whether it’s a simple summer snack or a centerpiece party treat, rainbow sugared grapes are guaranteed to be a a hit with both kids and grown-ups alike!

This recipe brings back so many childhood memories for me. When I was a kid, we used to dip our fingers in Jello packets at swim meets — for “energy” I think. Oh the 80s!

I like to think that these Jello frosted grapes are a bit healthier with the addition of grapes (you could also use strawberries or another fruit of your choosing). In any case, these sure are fun to make…and eat!

Moana Hawaiian Punch Recipe (with Video)

My daughter is obsessed with Disney’s Moana, and we’re looking forward to receiving our copy of the DVD sometime in the next week! To celebrate, I created this delicious Moana Hawaiian Punch recipe to enjoy during our upcoming Moana family movie night!

Bright, fruity, & festive! This Moana inspired Hawaiian Punch Recipe is the perfect drink for your next family movie night or kids birthday party!

Moana Hawaiian Punch Recipe

This recipe dresses up a traditional fruit punch with some of our favorite island flavors. Coconut water adds a richness of flavor, and is a healthier mix-in than traditional soda-based punch recipes.

I went with a red fruit punch because it reminds me a bit of Moana’s outfit, but really any berry or fruit punch can be used in it’s place. This is a fun party punch or alternative to soda, and my daughter always looks forward to these special treats on our family movie nights.

This Hawaiian Punch recipe is the perfect special treat for a family vacation or kids birthday party too. It’s one of our favorite summer drink recipes and we hope you love it too!

(Plus, if you want, you can add an ounce of vodka to make yourself a Hawaiian cocktail – just don’t mix up your glass with the kids! Maybe garnish them differently or put in different glasses.)

Why We Love Coconut Water

More and more you see coconut water used as an ingredient in healthy drinks, both for kids and adults. So what’s so great about coconut water?

For starters, one serving contains:

  • Fiber: 3 grams
  • Protein: 2 grams
  • Vitamin C: 10% recommended daily value
  • Magnesium: 15% recommended daily value
  • Manganese: 17% recommended daily value
  • Potassium: 17% recommended daily value
  • Sodium: 11% recommended daily value
  • Calcium: 6% recommended daily value

That’s a lot of good stuff inside! Plus, coconut water may offer free radical-busting antioxidants, which help keep our bodies cells healthy. It’s an amazing hydrator – it’s my go-to way to stay hydrated when we’re travelling as air travel can really dehydrate you and it can be hard to stay hydrated with all of the TSA rules around bringing water bottles on board. I can usually find a coconut water somewhere in the airport, or at least grab one on the way to the hotel. My daughter likes coconut water in recipes but doesn’t really enjoy it on it’s own – so we like to mix it into drinks, like this one!

Coconut also provides a more complex flavor, and a hint of tropical taste that makes this recipe — it’s fun AND healthy!

Moana Fruit Punch Ingredients

  • 2 oz Coconut Water
  • 4 oz fruit punch
  • 4 oz Mango Juice
  • 2 Tablespoons Simple Syrup (optional)
  • 3 Tablespoons Teal Sanding Sugar (optional garnish)
  • Ice

(amounts are per serving)

How to make Moana Fruit Punch for Kids

Pour simple syrup on one plate and on the other plate pour the teal sanding sugar.

Dip your glass in the simple syrup first then into the sanding sugar. Set to the side and allow to dry as you prepare your fruit punch.

In a cocktail shaker combine coconut water, fruit punch, and mango juice and shake vigorously for about 5 full seconds. Pour shaken punch over a glass full of ice.

Make a Party Pitcher!

To make a party-sized pitcher of our Moana fruit punch, simply double or triple the above recipe (depending on the size of the container you’re using):

  • 1 cup Coconut Water
  • 2 cups fruit punch
  • 2 cups Mango Juice
  • 2 Tablespoons Simple Syrup (optional – to help stick the sanding sugar to the glass)
  • 5 Tablespoons Teal Sanding Sugar (optional garnish)
  • Ice

Healthy Black Bean Brownies (Sugar free, flourless) – With VIDEO!

You know what makes you feel like a rockstar mom?

Handing your kid a brownie for breakfast and watching their face light up with confused, but unfettered joy.

With this sugar-free black bean brownie recipe, you can be that rockstar mom… and not have to deal with a sugar high (and subsequent crash) at 9am.

Brownies healthy enough to eat for breakfast?? Sugar free, whole food Black Bean Brownies are out-of-this-world fudge-y and decadent, but good for you too!

I had tried a black bean brownie recipe before, and was pleasantly surprised at the results, but every recipe that I knew of still had refined sugar as a main ingredient (or relied on artificial sweeteners). No. Thank. You.

So, we set out to make a great-tasting, sugar-free black bean brownie recipe with whole foods (that wouldn’t taste like we made a sugar-free black bean brownie with whole foods).

This recipe needs a food processor to really break up the beans and incorporate the other ingredients. I cannot vouch for results that don’t use a food processor. But the nice thing about using the food processor is that kids can help since all you need to do is throw in the required ingredients and blitz it all up!

These brownies don’t taste like a super indulgent, super chocolatey brownie – in order to do that, you would need to add unhealthy ingredients – but it is tasty and my kids always gobble them up without pause.

How to make healthy black bean brownies with no processed sugar

Ingredients to Make Black Bean Brownies

  • 2 cups cooked black beans (or 1-14oz can)
  • 1/2 cup chopped Medjool dates
  • 2 eggs
  • 1/2 cup natural applesauce
  • 2 tsp pure vanilla extract, or scrapings from one pod
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp good-quality salt
  • 1/2 cup chocolate chips, optional

Note: The addition of chocolate chips may add sugar, depending on the type used.

Kitchen Tools You May Find Helpful

  • Food processor (The Hamilton Beach “Big Mouth” is our workhorse)
  • Spatula
  • Measuring cups and spoons
  • 9×9 square brownie pan

These sugar free black bean brownies are crumbly, fudgy, and all of the good things that brownies should be.

How to Make Black Bean Brownies

Preheat your oven to 350F and line or grease a 9×9″ square pan.

Have your child put all of the ingredients ingredients into a food processor.

Cover your ears and blend!

Scrape the batter into the prepared pan and smooth it down with a spatula.

Bake at 350 for 20-25 minutes until set and a toothpick inserted comes out with crumbs but no wetness.

These sugar free black bean brownies are crumbly, fudgy, and all of the good things that brownies should be. We’ve made these twice now, and next time I’m going to be adding in some good-quality chocolate chips… to my half of the pan anyways.
