Peanut Butter Cake Mix Cookie Variations:
- Reese’s Peanut Butter Cake Cookies: Add 1/2 cup chocolate chips or Reese’s pieces for a chocolate touch
- Peanut Butter Chocolate Cake Mix Cookies: Use chocolate cake mix instead of yellow cake mix for a PB & chocolate treat
- Crunchy Peanut Butter Cookies: Add 1/2 cup of salted peanuts for a crunchy cookie texture
- Peanut Butter and Jelly Thumbprint Cookies: Instead of doing the cross-hatch shape on top of the cookies, make an indentation in the center of each cookie with your thumb. Fill each indentation with your favorite flavor of jelly or jam before baking.
- Peanut Butter Cup Stuffed Cookies: Take a small amount of dough, flatten it in your hand, place a mini peanut butter cup in the center, and then fold the dough around it to encase the peanut butter cup completely. Bake as usual.
- Peanut Butter and Coconut Cookies: Mix in 1/2 cup of shredded coconut into the batter along with the other ingredients to add a tropical twist to your cookies. You can alternatively roll the peanut butter cookie balls in shredded coconut instead of white sugar before baking.

Frequently Asked Questions
How do I keep these peanut butter cake mix cookies soft and chewy?
The key to keeping these cookies soft and chewy is not to overbake them. They may still look slightly underdone when you take them out of the oven, but they’ll continue to set as they cool on the baking sheet.
Can I make these cookies ahead of time and freeze them?
Yes, once the cookies have cooled completely, you can store them in an airtight container or freezer bag and freeze them for up to 3 months. Thaw at room temperature before enjoying.
Can I use any type of cake mix for these cookies?
Absolutely! While I love using yellow cake mix to stay somewhat true to the classic flavor of peanut butter cookies, you can experiment with different cake mix flavors like chocolate, devil’s food, or even funfetti for a playful twist.
