How Does Soda Work With Cake Mix?
The soda contains carbon dioxide bubbles. These little bubbles act as a leavening agent and also replace the wet ingredients you’d usually add to a boxed cake mix (eggs, oil, etc.) The result is a light and fluffy cake that’s full of extra flavor!

Instructions
To Prep: Preheat oven to 350°F and grease a 9×11″ baking dish.
Cake Directions:
- In a large bowl, beat together the cake mix and orange soda for 2 minutes.
- Pour into prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
- Allow cake to cool completely before frosting with your favorite frosting, or our homemade creamsicle icing (recipe below).
Icing Directions:
- Pour 2 cup orange soda into a small saucepan and bring to a boil.
- Reduce heat and simmer until the soda reduces to about 1/4th the original volume (or until about 2 ounces remain). Allow to cool completely.
- In a large bowl, beat together the butter and powdered icing sugar for 2 minutes, then add the reduced Sunkist soda. Beat to incorporate, then add the milk as needed to achieve a spreadable texture. Adjust the color with orange food dye, if desired.
- Use an offset spatula to frost the cooled cake.
- Garnish with sprinkles and orange slices (optional).
Prep Tips
- To achieve the fun texture shown in the pictures, use short strokes to spread the frosting, then go back over the frosted cake and rough it up a bit.
- We used orange sugar sprinkles on our cake – they give the cake a little pop of crunch that really reminds me of soda! You’re welcome to use your own favorite toppings.
- You don’t have to use the homemade icing recipe above. A great time saver is using whipped topping, such as Cool Whip, for the frosting. You could also use canned frosting.
