How to Make Funfetti Sandwich Cookies

Preheat oven to 350F.

Line two baking sheets with parchment paper or silicone baking mats. Set aside.

In a large bowl, beat together the cake mix, eggs and vegetable oil until smooth and completely combined, about 2 minutes.

Use a 1 1/2 to 2 Tablespoon cookie scoop to portion out the cookie batter and roll into balls.

Place the cookie dough balls at least 3″ apart on the prepared cookie sheets.

Bake for 10-12 minutes until lightly no longer glossy and spread out slightly.

Allow cookies to cool completely before frosting.

In a medium-sized bowl, beat together the butter, cream, vanilla extract and powdered sugar for 2 minutes. Adjust the consistency with either more cream or sugar, as needed.

(If you’d like to add sprinkles to the frosting, add them once you get the consistency perfect.)

Spread 2 Tablespoons of frosting on the bottom/underside of one cooled cookie and sandwich another cookie on top. Repeat with all cookies.
