Perfect for family movie nights, parties with friends or just a late night craving, these Potato Chip Nachos pair crunchy kettle chips with an assortment of savory toppings to create the ultimate sheet pan snack.

Potato Chip Nachos …aka Party Chips
I don’t know when it happened, but one day I woke up and my sweet tooth was replaced with a salty tooth!
Instead of craving brownies or cake pops (my previous favorite late-night desserts), I now crave super crunchy chips and other savory treats… and this actually works out so much better!
Baking up a batch of brownies late at night is the last thing I want to do, but quickly whipping up a sheet pan of crunchy, loaded party chips in about 5 minutes?
Yea, I can handle that.
These chips are a new favorite for our family movie nights and I’ve served them up at my book club to resounding success. We’ve changed the toppings out a few times based on whatever we had on hand or if we were craving a different assortment of toppings, but the method stays the same.
I’m sharing the classic version with you today, but feel free to swap out the ingredients based on what you like or have in the house. (Check out our recipe tips below.)

Ingredients

- Kettle chips or thick cut potato chips – enough to fill the pan
- Cheese – we used bleu cheese but you could use your favorite shredded cheese instead
- Bacon – make sure it is already cooked and chopped into bite-size pieces
- Veggies – We used diced tomatoes and chopped green onions. Black olives and/or diced bell pepper or jalapeño peppers would also work well.

How to Make Sheet Pan Party Chips
To Prep: Set oven to broil and grab a sheet tray.
- Layer your chips and toppings on the sheet pan;
- Broil the chips until blue cheese is melted;
- Serve immediately.

Prep Tips
- Make sure the cheese is well-shredded or crumbled to ensure a quick melting time.
- Pick toppings that taste good heated, or add them after baking.
- Choose toppings that bring different qualities to the recipe – salty, sweet, juicy, crunchy, etc. – to create a nice balance of flavors and textures.

Potato Chip Nachos
Ingredients
- 1 bag kettle chips
- 1 tomato, chopped
- 1/2 cup cooked bacon, chopped (approximately 4 strips)
- 6 oz blue cheese, crumbled
- 3-4 green onions, diced
Instructions
- Set oven to broil.
- Spread the kettle chips out in an even layer on a cookie sheet.

- Evenly distribute the chopped tomatoes, chopped bacon, crumbled blue cheese and diced green onions over the chips.

- Place in oven and broil for 3-4 minutes, until cheese is melted.

- Serve immediately.
