Cinnamon Swirl Bread with Glaze

This easy iced cinnamon bread is packed with the perfect blend of sweet and spicy cinnamon goodness, baked into a moist and fluffy loaf.

I looooovvveee cinnamon rolls. In fact, they might be my favorite recipe (next to chocolate cake of course). However, homemade cinnamon rolls with yeast dough are definitely a labor of love and can take all day to make. If you have the time, I highly recommend my Granny’s cinnamon roll recipe! But if you’re looking for a shortcake cinnamon roll recipe, this cinnamon roll bread is totally worth a try!

This cinnamon swirl quick bread recipe is made with simple ingredients. All you do is mix, pour, and bake! No yeast, no kneading, no waiting for dough to rise!

Ingredients

  • 2 cups flour 
  • 1 TB baking powder 
  • 1/2 tsp salt
  • 1/2 cup sugar + 1/3 cup for the cinnamon swirl
  • 1 egg
  • 1 cup milk 
  • 2 tsp vanilla extract
  • 1/3 cup sour cream
  • 2 tsp ground cinnamon
  • 2 TB water

Glaze ingredients

  • 1/2 cup powdered sugar
  • 1 TB milk 
  • 1 tsp vanilla extract

Instructions

To Prep: Preheat oven to 350 degrees F and coat a 9-inch loaf pan with non-stick baking spray.

  1. In a large mixing bowl, whisk together the flour, baking powder, salt and 1/2 cup sugar.
  2. In the bowl of a standing mixer, combine the egg, milk, vanilla and sour cream. Beat until everything is incorporated.
  3. Slowly add the dry ingredients to the bowl of wet ingredients, mixing as you add.
  4. Pour batter into prepared loaf pan and set aside.
  5. In a small bowl, whisk together 1/3 cup granulated sugar, 2 teaspoons cinnamon, and 2 Tablespoons water.
  6. Drop spoonfuls of the cinnamon mixture on top of your bread batter and use a butter knife to gently swirl.
  7. Bake for 50 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
  8. Set on a cooling rack for 20 minutes before removing the bread from the pan.

Glaze Directions

  1. In a small bowl, whisk together the powdered sugar, milk and vanilla.
  2. Pour the glaze over the bread and let sit for 10 minutes before enjoying.

Prep Tips

  • Glaze – Make sure the bread is mostly cool, to about room temperature, before adding the glaze. If the bread is still hot, it will melt the glaze and it won’t stick as well to the top of the loaf. You can also omit the glaze if you want more of a simple coffee cake texture and flavor.
  • Cinnamon – Feel free to use any type of ground cinnamon you like! You can even mix a pinch of cinnamon into the glaze for extra flavor.
  • Storage – Keep your bread in an airtight container at room temperature for up to 3-4 days. You can also freeze by wrapping the loaf in plastic wrap and placing into a large freezer bag.
